Remember to loosen the handbrake 75% Before starting,10mm spanner, cover clips off by hand, you dont need to remove bearing but its more difficult, there are round plastic tabs at back of shoes on the housing ,you must not lose them as they fall out , or replace them ,they are 100% necessary, only vw has them

What is the purpose of these tabs? Some of mine fell out, some broke. My handbrake is not working properly now when pulled up fully, could those tabs cause that?

My one clip fell out and I struggle to get it back in, I was tempted to put it in from the back side,as I thought it is to keep water out, but then I realized that it is very close to the brakes, so I managed to get it back in 🙏 Thank you so much for letting us know how important those plastic clips are 🙏

This is the way VW want you to do this work, but for those that don’t have the proper tools for the wheel bearing installation (cause of the crazy torque specs, which are 180nm plus 180°.) You can do this without removing the bearing. You can even do it without removing the brake cylinder but it can be little tricky if you haven’t seen it done before, but removing the brake cylinder is very simple. Ps: I was surprised to see you were able to take them drum so easily off without releasing tension on the shoes by forcing the self adjusting pin up, which probably means the drum is out of wear limit.

No, you do not hit it with a hammer, you push the adjusting wedge upwards inside the drum that releases it.

You are mostly correct, though if it's rusted to the wheel hub (happens sometimes), you can "doctor" it a little bit with hammer so it comes off hub, but FIRST you must release shoes by pushing the wedge up and see where it takes you, it SHOULD come off easily without any hammering.
