Such a great video about the sushi knives....:) I am just a beginner and wondering what is the best thickness of the blade of Yanagiba, 2mm or 4 mm? I mean thicker is better or not? Also, what is the best height of the blade, 32mm or higher? What would you suggest?

You can determine the thickness based on how you feel at hand. Some people prefer heavy one to easily wield, some prefer thick one to make it easy to hold. But most of the variety of knives are made by their brand and length, not their thickness. The length most commonly used are between 210mm-270mm. I’ve ever seen a big guy using 330mm. It really depends on people. You should choose the one you feel comfortable to use.

I’m a home cook and recently started preparing sushi and sashimi at home due to Covid. I have a hand forged Aogami sujihiki knife already. Is this knife good for sushi/sashimi or should I get a yanagiba?

Sujihiki is pretty compatible for slicing meat and fish, and some people use sujihiji for cutting sashimi pieces as well. Some specific tasks might be better using designated knives for them, but in general, it doesn’t make much difference. By the way, I use gyuto for breaking down a fish instead of deba, because gyuto can also peel the skin afterwards, which is what deba can’t.

yanagiba is usually 11inch plus in japan

Adam Li It depends on people. If you feel comfortable to wield 11 inch, that’s the best size for you.
