How to field dress a grouse in seconds. This method leaves you with a clean bone in breast with wings attached. After field dressing with this method you can fillet the breast off the bone for a boneless breast just like chicken. Or remove the wings with shears and roast whole on the bone.

I usually pluck them but was back in Newfoundland this fall and did a few like that as time was short. Works well when done soon after you get them.

Get the heart, gizzard and legs... its not that hard and if you cook it right the legs actually have a lot of meat...

He literally is tossing about 1/4 of the meat. The legs and thighs cook up just fine .

Takes two minutes to cut off the feet and peel back the legs. Might as well!

My family has done it this way for years now. But don’t throw the legs away. That’s a waste and a sin as far as I’m concerned.

I used that method until I began to raise my own chickens and now I dry pluck and waste not. So much waste of nature provided harvest in only eating the breasts. Liver, heart, bone broth the rest and pick off the meat for a soup.

Thanks for this, I will do some research on dry plucking. In this case I only had 1 bird and was at the very end of the trip.

@@Yugemos I agree! As long as it stays in the bush it’s not waste. The pine martens and ravens will happily clean it up.

Sorry Scott, but tossing the legs and thighs is a gross injustice to the grouse. They cook up just fine on a low, slow heat. Sear for a smidge on high heat, then add some onion, pepper and garlic. Cover and let cook on low slow heat until juicy and delicious. Don't get distracted. Sure there is some stringy / sinewy stuff that you need to chew around and spit out, but the taste is excellent. Plus there is a little tidbit in the Ontario hunting regs that states it's an offence to dispose of edible parts of a game animal. At least try cooking them as described before encouraging others to dispose of perfectly tasty grouse fare.

I see your point, this is way I’ve been shown and I see how I can improve. Luckily I’m not much of a successful hunter and this was only the second grouse of the year. Thank you for this comment and I will do better going forward.
