In my truck driver days I'd stop In Iowa along the Mississippi at a small shack where the fisherman who netted them would smoke whole sides of buffalo carp. Really good eating. Good video! God bless you and your family brother!

His son got an attitude and doesn’t understand or accept when he can’t do something. Boy was complaining looking into hot grease then when his lil ass got burnt, he goin look at his dad like it was the fathers fault. I’m sure that lol boy will learn a lot of stuff the hard way smh

We do carp the same way except we don't grind it up. My grandma taught me cut the red part out like you do ,but the only difference is we throw are cubes into a bowl of apple cider vinegar ,and let them soak. When you introduce them to that hot grease them bones disappear.

3:08 may want to try them all of the red meat blood fought off and then cube it up is a lot faster trim off all of the red then keep it up you don't have to worry about those little small pieces

Good old thin cornmeal based breading that isn't caked on. The reason is because you didn't pre-dip in a milk/egg sticky goo first. You just go at it with ice/condensation, or very light water slightly damp (not too much). I learned that trick many decades ago while I was down South at multiple local catfish shack restaurants with the best catfish I ever tasted. What do people back home in Indiana keep doing wrong? They have that thick, hard, burnt, greasy, nasty breading that is caked on 1/8"+ thick where you can't hardily even taste the fish...it's all batter. Long John Silver's could take a cooking lesson from him and his boy here! 😀

Reminds me of the sturgoen nuggets my dad used to make when you could still keep them. They got huge in the Columbia river gorge.

I have eating carp Buffalo gar I've cooked it many different ways and it's good everything I say about gar is much better while it's still warm you know how you have catfish and put it in the icebox and maybe get a piece out later and eat it you get a little gamey taste with cigar when you do that but it's still great little carp I just cook them like you're going to cook a perch

I like the carp better than the Buffalo. It has more of a red meat flavor instead of the white meat you're used to with fish.

I thought it was just the normal carp. These are eaten all around the world but since Americans in particular have an aversion to it, I've seen a number of attempts to rebrand it :]
