Sadly this stopped working for me after a recent software update - the magic link blue screen loads, but then it doesn't come up as an option inside Display settings... (Well done Apple, what a brilliant decision to remove such a feature from the M1s)

Will I be able to have a different screen on each monitor? For example MS Word on one screen, and MS Excel on another? Should I be concerned about the load (? words here) on the MacBook Pro?

Yes you can use it as 2 separate monitors running separate programs as usual. The M1 MacBooks have a pretty insane amount of power so there's no concern about that.

You can also alternatively use display link ports to connect even 3 monitors, thats the only way probably plugable brand products would be the best fit
