The national dish of uzbekistan is an aromatic rice pilaf known as plov. it is enjoyed as a weekday meal and specially prepared for holidays and wedding feasts.
Plov has been a cornerstone of uzbek culture and identity for over 1,000 years, and in 2016 it was added to the unesco representative list of the intangible cultural heritage of humanity because of its role in the traditions and hospitality of uzbekistan.
We visited besh qozon pilaf center in tashkent to find out how this dish is made and see what it takes to make such big batches.

I have been into that very shop many times and you can smell that absolutely aromatic pilaf before you even arrive at the shop itself. Uzbekistan has such an addictive food culture it’s very impressive and although some of the street food isn’t familiar to people like myself, it’s very much worth taking the time to venture out and about in Uzbekistan to see and try it yourself. I have been to Uzbekistan six or seven times and the food adventures there are always memorably biblical.

So true. People have no problem eating chocolate, Nutella, and ice-cream, french fries, etc, which are like 20-30% processed fats, but complain about pilaf which would be like 5-10% fat as a meal

What is happening with rest of oil? Plov is fantastic, I have tried it on various places in Uzbekistan, but I am just curious what are you doing with rest of oil after all food is consumed? Do they use it for something else or it is just trowed away?
