The steak is-a burned, Gino. It’s now loaded with what doctors call “HCAs” (Heterocyclic Amines). These are cancer-causing chemicals. If you had cooked it properly it would have undergone the Maillard reactions and been delicious!

That is burnt bud. You really want to move the steak around more. Grill marks are for looks. What you want is a consistent brown crust on the whole outside. Keeping it in one spot for that long you will get a secondary grey area. Not a crust to pink.

The bitterness from the charcoal is intense when you burn the meat like this and of course in terms of taste, not good. Maillard reaction is all about caramelising the surface, not burning it. So, it's ok to accept that this was a mistake, not trying to convince everyone that this is how is meant to be done.

The most over-rated thing I experienced in Italy, a great way to waste of a good cut of meat is a Tuscan Fiorentina Steak. It's mind-blowing how how much better it could be, I remember being SO DISAPOINTED in Florence.

Salt always after cooking! I put thick cut steaks in the oven at 40 degrees for at least an hour before cooking then I promise you you’ll have the best steak ever.

I understand steaks are a highly personalized food, but I swear every "Tuscan Steak" video I've ever watched means charred on the outside, purple/raw on the inside with a huge grey ring. Tuscan steaks are just way too thick to cook for 12 minutes like that.

D’Acampo, and you know it 😂 “bitterness from the charcoal” is absolute BS: you’ve taken that steak far beyond the Maillard Reaction and taken the browning over the edge into actual charring, where caramelised sugars are effectively burnt black. The overall effect will still be edible, but you’ve misjudged this and you know it! You’re a fine chef, certainly, but you’re also a pretty impressive actor 😂

I come from Greve in Chianti and that's roast beef, not a Florentine steak! :( Burned outside and too cooked inside. No florentine wraps it in aluminiun foil, since it gets "boiled". Call it a "steak" but take away the word "Fiorentina" from the title. That's an insult... For everyone who wants to cook a florentine steak, this is not the way.
