I worked in his kitchen from 1998 to 2003. It was the best time of my life. Such an inspiring person. One afternoon, we sat together with a group of other four people and peeled 600 kilos of potatos. We then used the potatos to create the biggest tortilla ever cooked in human history. We later found out that a much bigger tortilla had been cooked in Galicia, Spain. When we told Francis, he laughed and responded that he had known all along. He tricked us into believing that we were breaking a world record because he just really wanted to eat a humongous tortilla. And he did.

Tuve el placer de conocerlo en un evento en Uruguay por el 2015, donde cocinó con su domo carnes asadas, verduras y ananás. Era un casamiento de una conocida Chef, donde él, además de invitado de honor, era el encargado de los fuegos. Estaba solo, sentado en un banquito; en silencio, con un pañuelo rojo en el cuello, miraba el fuego. Me acerqué, lo saludé y le pedí permiso para sentarme a su lado. Asintió con la cabeza. Un chef de los que debe haber poquísimos en el mundo, inspirador. Enamorado de la vida, de La Patagonia y de su fuego. De ese montoncito de personas, de las que tenemos que sentirnos muy agradecidos de haber podido coincidir.

Es un poco el Piazzolla de la cocina? Un grande Francis, esa serie de programas recorriendo la Patagonia, abrigado y prendiendo fuego donde sea para hacer de los alimentos la mejor obra de arte. Lo que más me gustaba era el cierre, el final consistía en una lectura de un cuento, algo breve que dejaba un mensaje. Calidad asegurada!

Mi viejo, fanático de la gastronomía, ponía siempre su programa para criticar cómo quemaba las cosas y trataba todo con poca higiene. Lo glorioso es que no se perdía un programa y yo lo recuerdo con mucho cariño. Años después indage un poco más en su persona y le tengo una admiración infinita.

I love cooking over the wood fire. it is a part of life that I believe is necessary to man. There is a peace a calming effect that the fire has on your psyche, it changes you and makes your stronger in some way. It is a skill, it is living and breathing and demands attention and care. there is some much to learn that cooking with fire can do for you and not just food but life and whole you are. Gather the wood, build the fire cook some food share it with others but also have the experience in solitude. thank you for an amazing heartfelt video.

A fines de los 90 tuve la oportunidad de trabajar para el en uno de sus proyectos, una tarde de mucho trabajo, como casi siempre debo agregar, con muchas reservas y eventos al mismo tiempo, casi no teníamos tiempo para comer nosotros. Solíamos limpiar los corderos , separábamos las paletas y los gigotpara el servicio y nos comíamos las costillas con algunos verdes y listo. Ese día en particular no tuvimos tiempo ni para eso, así que me dispuse a simplemente calentar agua , tostar algunos panes y calentar unas salchichas caseras perdidas en una heladera y comer eso con un poco de mostaza o algo. Se me acerca Mallmann y me dice …”que comemos hoy?” Yo apenas en susurro le digo ….”panchos, Francis….” Mallman sin inmutarse me palmea la espalda y exclama…”viva la patria!!!” Y siguió caminando entre nosotros.

Amazing documentary. I myself didn't know that much about Mallmanns besides he had been the teacher of most of the chef I do like from Argentina.
