Looks great, I'd be tempted to add a lean meat crumble. Or possibly skip the fennel and go all out with a sausage crumble for the fennel. But I'm definitely going to try your recipe straight up, first. Thanks for sharing.

As long as it is only you, you can taste twice with same spoon. 😀 Some veggies, I never cook to point they go mushy or have em raw - Radish, Cabbage, Cucumber (some Indians do cook them), Bell Peppers, etc. Does this one end mushy or has crunch in it?
