I've tried caveman style a couple times now and honestly, I have no idea why this is a thing. Ash into your meat, hot spot burned into the meat. I have not had any luck at it. I suppose there's a reason why we've evolved past this and added a grill to get the meat off the ground. Glad it turned out for you but I'm keeping my grill.

I started caveman grilling six months ago; I will never go back to using a grill for personal steaks.

Don't give up. Just work on your technique and make sure you're using lump charcoal and NOT briquets.

Try the Alton Brown method. You use a thinner cut, 3/4" to 1", 45 seconds to 1:15 per side, then wrap it very tightly in two layers of aluminum foil and let it rest. The ash/charcoal will melt/ dissolve into the fat leaving you with a perfect steak. Also, please cut your meat on the bias against the grain. How you cut your meat effects flavor and mouth feel.

I'll tell you a little well known secret. Salt your steaks the day before (aka: dry brining) then I vacuum pack them, but a zip lock with most of the air sucked out works fine too, in the fridge for 24 hours, then let them come to room temp. The taste and tenderness is literally night and day compared to salting them the same day you grill them. Of course I ALWAYS Sous Vide my steaks now, THEN grill them very hot to get that charred crust. Since I started using Souse Vide, I've never had a better steak ANYWHERE.

Steak came out perfect! I honestly found my own hack! I was drinking one night, and now they leaf blowers blowers that are powered buy clean lithium battery. Ego/ DeWalt extra... Once chunk is caught, I hit it with the leaf blower for a couple minutes. Not only does it get it roaring hot red 800° but it blows off any excess ashes.

It really doesn't get much ash like you would think. Natural lump charcoal will ensure you don't have to worry about cooking on anything that isn't natural.

Just keep in mind it doesn't have a cooking lid - so Hibachi style all the way. Great little portable grill. Love the included storage container and cutting board.

This Cube grill is really easy to take with you. Really love the storage compartment and built in cutting board. Of course, there is not lid to this Cube - so you will be grilling Hibachi style. High heat oil is more preferable for steak searing. Avacado oil, grapeseed oil are both good options.

Yes, for Medium Rare. I would say adjust the thickness of your steak if you want it more or less done. You don't want too much longer than that on the exterior sear time wise.

All good, there are plenty of methods to get a tasty steak. Go with whatever works for you, I love pan seared as well for ribeye.
