Hi Priya! Go ahead and use dried red chillies. Flavour will be different but cool. Also you might get the ghost chilli oil in UK. Let me know how it turns out 🙏

Yes a lot the texture of fermented and fresh bamboo shoot is completely different and that aromatic pungent flavour of the fermented bamboo shoot 🤤

I will be making this dish for dinner tonight. I ve already tested with my entire northeastern friends. But, never had the audacity to prepare myself. Also, do wish me luck. I find northeastern cuisine to be very healthier and unique in comparison to other Indian cuisine, and it doesn't even compromises with taste as well.

Bhut Jolokia in Assamese literally translates to ghost chillies also known as King/Raja Mircha etc

Hi, again a very unique way to make bambooshoot chicken...looks totally yum😋 especially after the rice flour was added..loved the tick consistency...but was the bambooshoot fermented or just fresh. Please do let me know coz I have made this recipe but with fermented bambooshoot so this is new and also the rice flour. Keep doing the good work. The recipes you post just keep getting better.😍

does fresh bamboo shoot taste tangy? the fermented one tastes tangy.. am confused 😕..please explain me. we store unchopped fermented bamboo shoots too. and cut it while cooking.are you talking about that?

Hey Dugyir!! No fresh ones aren’t tangy- they are bitter so you should boil and drain the water! It is crunchy like mild water chestnuts. Fermented ones are tangy preserved ones 😊
