Top medical tip. The active ingredient in the peppers is NOT soluble in water. That's why it keeps burning even when you wash. But the ingredient IS lipid and alcohol soluble. So if your skin is burning wash it in the strongest alcohol you have, or with vegetable oil. If it is in your eyes, then wash your eyes with milk - the more fat content in the milk, the better. Vegetable oil and milk fat is a source of lipids. I once touched my eyes after preparing a hot sauce. Some people go to hospital and get more pain as they wait. I washed my eyes in full fat milk and was pain free in less than 5 minutes. Science in cooking. Awesome.

pitboys, I live your vids, and have tried many many mannnyy recipes of yalls down here in south Texas. Y'all are the reason that I started BBQin and started fabricating my own pits and smokers. Got a lot of respect for you guys and what y'all do. That said I have only one question: Why'd y'all take the seeds out!?? It's true the peppers have a lining on them, and that alone is scalding hot, but add the seeds and WHOAAA BUDDY THATS HOT..... My wife is from Tabasco Mexico, and she eats one of these with her food every chance she gets. Her family is no exception, she probably eats more peppers than another I've ever met, and when she saw y'all taking out the seeds she goes, "Aww mann, I'm do disappointed". hahaha thanks for the vid guys! cook on!!

With the left over tops of the peppers i add them to a pan of rice wine vinegar and poach them for 10 minutes to make a spicey vinegar. If you like it milder seive out the peppers, if you like it spicey leave them in and bottle up including the peppers. If you like it OMG hot add the seeds as well as the tops, I make all 3 types and use in my cooking. Thanks for all the videos take care and God bless.

seeds do not have the heat the placental rib does the white membrane in the pepper. The only way seeds get any trace of heat while the pepper hangs on the plant the capsaicin oil drips onto is only reason they may have a trace of heat but removing them does not drastically reduce heat of the pepper.

If you want to keep squirrels off your bird feeder, rub the chords, string or post the squirrels use with the inside of a habenero. Birds can't sense heat from peppers and it wont kill the squirrels, just teach em to stay away. Works for about 3 weeks or between each heavy rain.

Habaneros are strangely addictive to me - I once had a co-worker who would bring in jars of her homemade Habanero salsa and I would eat half a bag of tortilla chips with half a jar of the stuff in one sitting. Same when a friend got me a jar of Habanero peanuts at Christmas. It's hot, it burns in and out, yet for whatever reason I can never stop eating once I start.

Capsaicin, which is the chemical compound that contains fiery heat, is actually concentrated in the inner white pith or rib of the chile pepper. While the seeds may be coated with some of the capsaicin since they're in contact with the rib, they themselves don't actually contain any heat.

-the seeds themselves are not hot. But capsaicin gets on the surface of the seeds and with the habanero pepper that can be some serious heat, and for some indigestion, if you don't remove the seeds. -BBQ Pit Boys

Just for a little more info if nobody has told you already, the pit boys are right, the seeds themselves aren't hot, the capsaicin comes from the white membrane where the seeds are attached. So yes some of the heat transfers onto the seeds, but most of it is in the membrane.

I use premade hot sauce as a base in a few of my hot sauce blends.. saves time.. to make the sauce like the bottled kind takes a long time , it needs to sit and ferment for 6 months to 2 years or more.. so yeah.. if you want a fast sauce using a premade helps the flavor along..

Without using hot sauce as a base, you have to spend at least 5 days fermenting. It's just quicker using a pre-made, to be able to use it straight away.
