HOW TO COOK PEPIAN - GUATEMALAN FOOD

Its been minute but me and my mom are back with more food videos and in this episode we make an amazing dish that has been cooked in Guatemala and Central America for more than a century, PEPIAN and in this case Pepian Negro.
Made from a mixture of dry and wet ingredients, this is not a quick dish, but well worth it!

INGREDIENTS FOR CHICKEN BROTH
1 FULL CHICKEN (CUT)
1 TOMATO
1/2 WHITE ONION
2 CELERY STICKS
16oz OF EJOTES AKA GREEN BEANS
4 CHAYOTE SQUASH AKA (GUISQUIL)
6 TO 8 GOLD POTATOES
1 TO 2 TSP OF SALT AND PEPPER
2 TBSP KNORR CHICKEN POWDER
CILANTRO BUNCH
INGREDIENTS FOR PEPIAN
1 CHILE PASA OR PASILLA

1 CHILE GUAQUE
1 PIECE OF PLANTAIN SKIN
5 TOMATILLOS OR MIL TOMATOES
5 TO 6 ROMA TOMATOES
1/2 WHITE ONION
STICK OF CINNAMON
5 CLOVES OF GARLIC
2 CLOVES
5 PEPPERCORNS
1 CUP SESAME SEEDS
3/4 CUP OF PUMPKIN SEEDS AKA PEPITAS
2 CORN TORTILLAS
