Near and dear to my heart, as I'm Guatemalan. Actually when you suggested Christmas food, I was going to suggest Ponche, Or Atole de elote ( a creamy corn drink) Or even Champurado. You did an awesome job! Guatemalan Tamales or Tamales Chapines can also come in the form or Potato/Rice/ Masa base, the black ones are sweet tamales which come with plums and raisins in them. The best way to eat them is with a squeeze of lime and some Mexican bread rolls, or pan frances, to sop with. Always impressive Hilah

I love the steps and your calm process. my mom taught me how to make them for New Year's this year. we use 3 types of chile's (guajillo, pasilla, and Chile nuevo) for the masa my mom buys prepared tortilla masa and strains it to remove the grains and instead of lard to it we used grapeseed oil and melted butter. Oh I wanted to give this tip! after washing and cutting the stem off the leaves microwave 5 eaves at a time for 2 minutes. Makes it easier to fold and not break. Still, we foil every one...can't let any of that good stuff run out! Again great video and you remind me of a prettier Gwyneth Paltrow.

wow what a nice surprise. Im very impressed by your technique Hilah. We make these every year for christmas at my house. I always help stirring with the giant spoon. We used to tie them up but now we just use foil too. I dont know about the raisins, but sometimes we add olives or Loroco. Im sure there are different recipes though. We always end up making hundreds for friends and family. They're also the reason I always gain weight during the holidays.

my mom makes them every christmas and they are my favorite holiday food! she puts the pork in raw and she adds hominy, green beans, and diced potatoes! i've never thought of putting raisins or capers. i love it! this is a very accurate video on how to make guatemalan tamales :)

A great tip for folding the tamales is fold them the same way Hilah did, but layer the aluminum foil underneath the leaf (folding the leaf and the foil together) and when you fold the wings, lay the tamale on the table and run the side of your hand from the edge of the leave to the center, pushing the excess product to the center and it gives it a sturdy shape :)

Good job! But we don't add raisins to our recipe and we boil the banana leaves for 5 to 10 min to make them soft and workable. Also, if you add a little chicken boullion it gives the masa a great flavor! We do add raisins to the sweet tamales and add some chocolate to the salsa. Basically the same salsa ingredients but we add some chocolate and raisins. Tamales Dulces!

Wow! You made making tamales look easy. I've been making them for about three Christmases although when I make them I look like an episode of 'I Love Lucy', LOL! I'm a Vegan and trust me, I've tried with my family and it doesn't come out the same way. The masa doesn't taste the same and it can become very tough without the lard :( let alone the ingredients. You might be able to find some vegetarian recipes for Mexican Tamales online and those do taste better because the masa is different.

Actually some parts of Guatemala do add raisins to their tamales. Not just the sweet ones. I know I'm married to one his whole family adds raisins to them. To elaborate on the comment that was made earlier

I had Tamales once in the north of Argentina and it was delicious! They seem a lot of work and I believe that you can't get half of the ingredients here in Germany. I already watched out if there are restaurants that do them, but there are none. I have really god memories of this meal and I would love to eat Tamales again...

Loved your video.. I do put raisins on my tamales..obviously people this recipe is a version adapted to a modern lifestyle..otherwise unless you grow your own corn..grind it yourselves..grow your own chicken..cut banana leaves from a tree in your backyard ect then you will never have the original version of Guatemalan Tamales!

Hi Hilah! First of all, Congrats! You did such a great Job in this recipe! I had a good laugh when you said " a weird combination" and let me tell you, in my country,, Venezuela, we used to make this tamales in this "weird way" during Christmas time only... We call them Hallacas. Almost all of our latinamerican food is very elaborated and In the case of our hallacas, we used to have an almost an special party with a large group of family members to prepare them for all the family. Hey guys, that "rib" she cut off the leaves (because of the stiffness) can be used to tie the tamales in the leaves down to bind it. I just viewed it on a video from a lady in Guatemala. Good luck people!

My mom would point out 100 things wrong with this recipe (being guatemalan is like a pride thing for her so she gets mad when people do things a different way), but I give you props for doing a great job! Now my mom hasn't showed me how to make guatemalan tamales, but I do know that they are supposed to be bigger than that. And the olives and raisins aren't supposed to be in there, but that is your own personal touch ;) oh! and we eat them with bolio (bread) - yum yum yum!

I'm half Guatemalan, and my grandma would always put the olive in there. Not the raisin. I've never seen them made without the olive. The olive gives it an additional yummy flavor.

You know it! I got it at Fiesta, which is a grocery store chain that carries a ton of Mexican and International foods. I'm pretty sure the pot was made exactly for steaming tamales.
