We love this wild, sea salty marsh grass. Beautiful with fish, lamb and veg. And its salty taste goes especially well with sweet carrots, creamy broad beans, avocado or tomatoes. We made this interactive video so you can have a peek at our four recipes in any order you like. They are just a few ideas to help you make the most of this seasonal gem.

I fried mine this morning with butter garlic , red onion and mushrooms 😋 then lemon and salt on top

all exellent & so easy. even my fussy partner will eat these bar tomatoes which is my favourite along with the fish. great quick & to the piont video ☆☆☆☆☆

Abel & Cole i love Samfire & my 3yr old likes it too. i always fry or steam mine & not for too long either as it takes some flavour & vitamins/minerals out boiling. i use it whenever I make spaghetti/linguine/pasta. id never put salt with it & its great with lamb cis it is salty with the sweet works awesomely!!!! blacknpepper & regular butter makes it great on its own maybe a tiny bit of lemon too. =)

I’ve eaten samphire from the Norfolk marshes for decades and don’t recognise the stuff they sell in the shops. Why is your samphire not stringy? We cook ours until you can pull the tender flesh from the ‘string’ and then add vinegar and black pepper. Incidentally, we pronounce it samfer in Norfolk.
