Garlic chicken with mushrooms
Stir fry chicken mushrooms taste extra delicious with fresh garlic in it. It adds another dimension to an already excellent dish. For best results pre blanched the mushrooms in hot oil for that smooth and silky texture and feel when consuming. Below is my recipe for one of my favourite dish.
Ingredients;
Half chicken breast (sliced)
120g mushroom (cut them in half if they are too big)
30g onion
1 stalk spring onion
3 cloves fresh garlic
60ml water
Condiments
1g salt
1g MSG
1 teaspoon dark soy sauce
Dash of cooking wine
Half teaspoon oyster sauce
Dash of white pepper powder
Potato starch to thicken
Blanch the mushrooms in hot oil for about 20 seconds, drain and set it aside.
Blanch chicken in boiling water for about 5 minutes, drain and set aside.
Heat wok with some vegetable cooking oil, add garlic and onions follow by the mushrooms and blanched chicken.
Add dark soy sauce and give it a few stir fry.
Add dash of cooking wine and white pepper powder.
Add salt, MSG and oyster sauce.
Stir fry for a bit more then thicken with potato starch and add the spring onion to complete.

I don't like mushrooms but that looks so nice I'll have to give it a try. Can you do chicken in OK sauce and duck in orange sauce please thats my favorite

I believe I have an orange sauce dish on my channel. as for OK sauce, I'll give it a go when I have some time. It's hard running a take away and making videos.

Hi Khoan whats the secret to getting chicken like a takeaway. Freshly cooked chicken never has the same texture. The closest i have came to chicken from a takeaway is when i have stir fried to much and refrigerated some for later. Does a chinese restaurant pre cook chicken prior in the day or something. I have managed to get everything else exactly like my local takeaways because of your channel but i just cant get the meat the same texture.

Takeaway grade of chicken breast tends to have an higher water content than supermarket fresh chicken. I quite like the texture of the takeaway grade I buy from the Chinese supermarket but it’s certainly different in texture. Which do you use in your shop Khoan? Either way it’s all good as far as I’m concerned. Plus this is one of my favourites with plain noodles or egg fried rice. Oh and your tip on pre blanching the mushrooms in oil before, is pure gold. They pop in the mouth x

anything above 18% ABV, if you don't consume alcohol just leave it out.

Hi Khoan, this is the first recipe I have tried from you and followed all your instructions. It is the first time I have used my wok (I have same wok as you) for boiling and deep frying. Tastes just like my local take away thank you for sharing. I know it is hard with the heat of wok and extractor fan but can you make your sound more clear.

maybe they used jimmy's sate straight from the jar. Most people add peanut butter to it. I suppose I can put it on the to do list.

i shallow fry them in a little oil on high heat and move them around for about 1 minute

Use shao xing or any alcohol above 18% ABV... whiskey :)

there's absolutely nothing wrong with MSG, it's just one of tho's food myths, where in actual fact it's much healthier than rock salt or sea salt. It's actually ideal for tho's who require a low sodium diet for medical reasons yet still wish to season their food.
