Garlic chicken with mushrooms
Stir fry chicken mushrooms taste extra delicious with fresh garlic in it. It adds another dimension to an already excellent dish. For best results pre blanched the mushrooms in hot oil for that smooth and silky texture and feel when consuming. Below is my recipe for one of my favourite dish.
Ingredients;
Half chicken breast (sliced)
120g mushroom (cut them in half if they are too big)
30g onion
1 stalk spring onion
3 cloves fresh garlic
60ml water
Condiments
1g salt
1g MSG
1 teaspoon dark soy sauce
Dash of cooking wine
Half teaspoon oyster sauce
Dash of white pepper powder
Potato starch to thicken
Blanch the mushrooms in hot oil for about 20 seconds, drain and set it aside.
Blanch chicken in boiling water for about 5 minutes, drain and set aside.
Heat wok with some vegetable cooking oil, add garlic and onions follow by the mushrooms and blanched chicken.
Add dark soy sauce and give it a few stir fry.
Add dash of cooking wine and white pepper powder.
Add salt, MSG and oyster sauce.
Stir fry for a bit more then thicken with potato starch and add the spring onion to complete.
