I have to agree that the best chowders this side of the Rockies are at Pike Place Chowders. They are otherworldly good. Thanks for sharing the thoughtful recipe, process and tips. I contacted Better Bouillon and asked them is it necessary to have the Ham Base and not the Clam? Service rep has said they’ve received numerous calls on the clam base !

Hi there, I will have to try your recipe some time, it is very close to the one I use. If you are looking for a place to eat clam chowder I would suggest "The Chowder Bowl" in Newport Oregon. It has changed hands since I have been there but we used to go there and have all the clam chowder and salad we wanted. If they still make it the way they used to you could almost stand your spoon up in it.

It turns out that Better than Bouillon discontinued their clam base. Oh no! Any other suggestions? I thought that would be the secret that would make my clam chowder over the top like my late uncle's who was a fisherman in Maine! We spent many summers clamming at low tide then he'd work his magic with lobsters and clam chowder. I was too young to know I should have been paying attention!

howders, lower New England chowder (including those with tomatoes) and Rhode Island chowder. You can pretty much get them all in Boston. Your recipe when I tried it was complex and delicious but probably a bit expensive for a New Englander. I doubt many in Boston would object much to this recipe save the spice combination. But good stuff nonetheless. 👍

I like most of this recipe, but I don't use spices in mine. Especially thyme. Corn starch? Better than flour? That's questionable, gives the chowder a more translucent look and slimy texture. Flour has better flavor and keeps the milky appearance for the chowder. I really like the blending part. Keeps the focus on the clams. Powdered garlic instead of fresh is a very bold move. Garlic, like onions, is great in all its forms, fresh, dried, sauteed, or just boiled, or fried. Great job but why spill on purpose? Messing with my OCD!

I made this yesterday for the first time after having the real thing (PP Chowder) about three weeks ago. This is very close to the original and isn't hard to make. BTW the better than bouillon clam base has been discontinued.... I found a diefferent brand on Amazon.

Took Mom to Seattle with me so she was a great tester for some carefully reheated (sous vide) leftovers. She agreed... this is the real deal. Dad didn't go but ate all of his and loved it. This is a keeper.

Apparently the Better than Bouillon clam base was discontinued shortly after this video was made. The company suggests using their fish base or lobster base as an alternative.

I recommend everyone heat and taste a tablespoon of clam juice from a jar before using it! That will be the last time you use it I swear. Most people use it but have never tasted it. Taste it. Do you want award winning taste? Make fresh FISH stock. Yes fish stock. It’s a main ingredient of ALL good clam chowders. Honeys, you know better than that...serve it in a pumkin or Butternut squash (the sweet kind) and garnish with sweet potatos or yam....avoid the carbs...diabetics...but yes, it works with bread too...disney brats. You may also use a Green Pepper or Poblano Pepper to hold the soup.

Overfishing in certain parts of the west coast decimated local populations before conservation could begin (thanks gold rush). Other populations msy have since filled the void, but whats lost cant be returned - not really.

If you want good clam chowder, don't use canned clams. Buy the clams and boil them and chop them up for use. Use the water from boiling the clams in the chowder also. I don't know why you did away with the bacon grease. You should cook your potatoes, celery and onions in it on low. Have to watch you don't burn them. You don't want any dark burn spots. Sorry, but I want New England clam chowder. That is not what this is.
