Papa Joe, you have the best oven roasted whole brisket recipe by far. I just did one myself and it was a choice Costco brisket. I've smoked them for years and wanted to try something different. I used a 12hr cook method of low and slow and I took it out at 185ish. Then recalibrated my oven to lowest temp of 150° where I left the brisket wrapped in paper and foil until the next evening supper. A total of 34hrs. I lost some of my bark due to wrapping it in the 170's. The 180's is the right decision on your end. Almost all the fat cap was rendered down except for the area down the middle. Slicing it proved to be very tender and without it falling apart. It passed the bend test as long as I was gentle with it. The tenderness and moisture was great, the flavor was great, long cook not so great but as you know, there's not as much effort as in smoking on an offset rig. Note, I did have to foil the crispy edges at about 2hrs. The lean end started curling but the loosely foiled point and lean ends stopped it but still let it develop bark. I did use a water pan for the 1st 3 hours until the bark was set and removed at that point. I'm definitely going to try your recipe next and I'm going to purposefully look for a select grade to do it with. A real pit master can take a tough junk piece of meat and turn it into a thing of beauty and deliciousness. You are that pit master.

That's a great jolly laugh during the taste testing! My late Dad was a master at brisket and pork shoulders on his deep, heavy structural steel pit with mesquite. Although I watched him closely, he never explained the steps and did everything by eyeball with no thermometers. I've had trouble trying to approach his results despite grilling, smoking and cooking for forty years. Since it's only the wife and myself at home now, I tend to buy small hunks of brisket, either flats or points, and braise or pressure-cook them. I have a nice thick combination cut chunk I'm about to thaw and oven-bake. It's sort of a center piece with parts of the flat and the point. I'm torn between doing a beer braise or a dry roast like you did here. I generally use either grainy mustard or worcestershire or liquid smoke for a binder, and the Texas-ish rub of salt, pepper, onion powder and garlic powder. Sometimes I'll copy my Dad and make slits in the meat and insert garlic cloves. By the way, my brisket trimmings go with pork trimmings into home-ground burger. Thanks for the information.

Great vid...I tell folks to just mash that dry rub on, binders really arent needed on red meats I find. But since it's in the oven and not getting smoke, you kind need something to bring that flavor out on the surface, so that makes sense in this case. Impressed you made a select cut work too, not many folks do that, I love that! I will also say the best way to ensure a smoke ring is: let your brisket marinade in fridge for several hours overnight, then put it in the oven (or smoker) basically right out of the fridge...by doing that, the temperature difference between the outside surface and inside causes that ring to form, its all about the temp differential. A lot of folks like to sit their brisket out to warm closer to room temperature, and you can do that, but if you want that smoke ring, you have to go fridge-to-oven/smoker.

@mamaandpapajoe hey forgot to let you know. I did a 13 lb in the oven for about 11 hours and it turned out good. Really wished I had a smoker to do it instead but oven still turned out good. Came out a little tender

Thank you Sir for this video. I loved it very much. Reminds me of when my dad was alive, he taught everything he knew with everything especially BBQ and butchering. It’s hard to remember it all since he’s been gone 10 years. He also showed his way of cooking brisket in the oven. I’m glad I watched your video. I learned new tips and tricks, I might try out. Yes, it can suck living in apartments. Where I live they don’t allow BBQ pits… I sadly had to get rid of the one my dad got me on my 18th birthday. And fine you hundreds of dollars if you have one. And they were gonna fine us hundreds if I had kept my pit. So, I really appreciated your video. I have a question 🙋♀️ if you don’t mind me asking. Is it bad to add liquid smoke to your brisket in the oven? And if not then how do you use that? My dad was old school and never used that. I hope you/y’all don’t mind my questions. I used to drive my dad crazy with my 1,000 and 1 questions. 😅

It's amazing how foods can bring back awesome memories NTRG. I totally understand that for different reasons, people can't fire up the grill. A little liquid smoke goes a long way. If I were to use it, I would use it as a binder. I would put on a very light coat on my meat and then put my seasonings on top of it. This would allow it to mellow out and become a part of the seasonings and meat juices.

Hello sports fans! CJ, hope you and Mama are doing well. Question: have you ever done yakitori on the grill? I'd like your thoughts on parts of the chicken that are under utilized (but delicious!)
@mamaandpapajoe Жыл бұрын
I have not Cajun but I am interested. I've watch videos of them marinating and cooking gizzard and backs on skewers. Looks delicious. I'd love to do a video once I get some sort of table top grill.

Looks good, me personally I never use any seasoning, I let the pit do it and it turns out perfect Everytime

😂😂😂 you're good Louis, that oven is almost 27 years old. It's a simple way to cook a pretty good brisket for those without a grill. Thanks for watching.

When it comes to seasonings, sometimes less is more. It allows the proteins to shine.

Makes me think what a little liquid smoke would do either rubbed on it or injected into it. That or smoked salt and pepper? Thank you for the video. I appreciate you both! 🙏
@mamaandpapajoe Жыл бұрын
Great point points Turbo. I mentioned using liquid smoke in an earlier response. I'd use it as a binder, It's too concentrated to use as an injection. I think it would work.

@@mamaandpapajoe Oh I'm sorry I missed that! Yeah, injected it would need to be deluded. A lot! Be blessed!
