About that much, for however much meat you have, just use your experience.... and for about 3 hours. Clearly if you're cooking for 3 hours you're not doing it at 220c

He didn't rest the meat. That size of brisket needs to be rested for at least 30mins after taking out of the oven to allow the juices to redistribute. I learned that from my man @gugafoods

I’m sure the “shot in the face” was made in jest, but it was a pretty, pretty dumb comment. And I don’t want Louisiana viewed poorly because of it.

Not exactly bbq but definitely a good way to do a brisket if you don't have a smoker Edit: to be clear, he's not doing a full packer brisket, he's just doing about a 3lb flat. If it was a full packer I would be pulling my hair out with what he's doing

You have to overcook a brisket to get the muscle to break down. When the muscle breaks down that's how you get a tender fall apart brisket. Brisket is not a cut of beef you eat medium rare and is definitely not a steak cut.

As much as I HATE to have to say, especially to a Master Chef, and being a chef myself, I can clearly see and know, without any doubt, it is overcooked and dry. Everyone is human and makes mistakes, but to POST it as such, knowing that many are knowledgeble, is NOT a mistake. You rely on your own "Legend in your own Mind" attitude to "oversee" mistakes, but others are NOT blind. You knew very well it was overcooked and yet you posted it anyway. Why didn't you just try again with your daughter on a different day and post one that is right? I think its because you PUPRPOSELY overcooked it to teach others to follow you as such, so that your "REAL" version would always be better. Shame on you and your arrogance. "....Pride goeth before the fall...." - God (and that fall may not be within this lifetime, but it will be forevermore eventuall, thus be wiser and more humble, for its only the souls with humility that enter Heaven)

What a disaster. Normally I am a big fan of Chef but this is not BBQ. True BBQ is only made by fire from wood logs. Oven brisket is fine but don’t call it BBQ. He also cooked it way too fast at too high a temperature. Brisket should be done low and slow. Sorry Ramsey but this is not your forte.
