INGREDIENTS:
1 1/2 Kilo Pork Hock (Pata ng Baboy), sliced
1 medium onion, chopped
Dried banana blossom, soaked in water for 15 minutes
5 cloves garlic, chopped
¼ cup soy sauce
¼ cup seasoning
¼ cup vinegar
4 pcs. Bay leaves (laurel)
½ tsp ground black pepper
1 tsp whole peppercorn
1 tsp salt
¼ cup brown sugar
2 tbsp cooking oil
1 liter Water
COOKING INSTRUCTIONS:
1. Arrange pork hock in a large pot. Add salt and 2 bayleaf then put 1 liter of water
2. Remove scums while boiling.
3. After 1hour check for tenderness. Remove from the heat
4. Drain but save the soup base for later use
5. pre heat pan then add cooking oil. Sauté garlic and onion
6. Add Pork hock. Continue sautéing then add ground black pepper, whole pepper corn, soy sauce, and seasoning
7. Cover and simmer for 5 minutes to get a toast texture
8. After 5 minutes add the soup base and the 2 remaining bay leaves
9. Cover and cook for 15 mins under low medium heat
10. After 15 mins. add the brown sugar and banana blossom and stir
11. After 15 minutes add vinegar and continue to cook for 10 mins.
12. Serve hot. Share and enjoy!
