I live in Belize Central America. I live among the Mayans who mostly eat rice and beans, chicken. They cook on wood fires and in hand made earthen stoves. I introduced this stew to my workers, as I made a rather large pot of it and was in no way to eat it all myself. Apparently, my stew was taken to several people in the village to feed their families. The response was crazy! I am currently making a pot four times the size you made of stew to take to the village. They have never had Beef Stew before. These are poor people who could never afford the ingredients to this meal. Honestly it would take a weeks pay to afford this one pot of stew. So they are very excited with this. I will continue to provide them with this treat as often as I can. Thank you from the southern jungles of Central America. Raven

Some suggestions; the beef was crowded in the pan and as a result it was more steamed than seared as you can see from the large amount of water she ended up with in the pan. Use only the stew pot; sear the meat in batches and remove to a plate. Then cook the mirepoix in the stew pot but add generous amount of tomato paste when it is nearly cooked which adds a nice carmelization. Deglaze the pot with wine. Easy on the worcestershire. No sugar needed.

Is the meat supposed to still be tough after the initial searing or do we cook it until it's tender?
@ronvavra Жыл бұрын
@@Oscarnodwannabe It's interesting that she uses either tri-tip or 'roast' whatever that means. Probably referring to chuck. Tri-tip doesn't make sense because you are making stew not steak. If you used tri-tip it may be tender after searing, but what's the point? You're going to cook for a long time, so the tri-tip will go from tender to tough (it's complicated), back to tender. And chuck costs less.

Great recipe! This is a perfect dish for lockdown situation. I varied it a little by adding potatoes in large cubes, small onions and chopped carrots. I did not add any tomatoes. After braising the oxtail and vegetables separately, I added beef broth and all the other ingredients and cooked everything together in a slow cooker/crockpot for 5 to 6 hours. The taste was incredible! Ox tails are hard to get in the states. They add some much hearty flavor to this dish.

Pro tip, if you're going to deglaze a pan. Use red wine. At least with red beef, compliments it very well. It will also remove the acidity from the wine. You generally do not want to put raw wine into a dish. You can also sift the flour in the pot after the liquid ingredients were put in so you don't get clumps or flour.

When you use broth to replace red wine, add a small amount of vinegar and cranberry juice to keep the brighter notes that the wine would add. Depending on the amount of juice you add, you might want to skip or reduce the amount of sugar you add elsewhere in the recipe

Without a doubt this was the best beef stew I have ever made and I've been cooking for over 50 years. I rearranged the timing on when I added ingredients because I used the stock to de glaze the pan and I didn't have your mixture of Italian herbs so I used Italian seasoning. Other than that it was as shown. I don't know why you added the potatoes and peas at the end but I followed your directions anyway. The first night the wife and I had it and both were very impressed. I used Chuck roast and after cooking only about 3 hours it wasn't as tender as I would have liked but the flavor was exceptional. The next day I simmered another 3 hours which now had the potatoes and peas and it didn't suffer for it. So next time I might try adding all ingredients at the same time and simmer longer. Honestly I think the secret is in cooking the ingredients first instead of throwing all the raw ingredients in the pot and cooking. I doubt seriously that adding the potatoes and peas earlier will be noticeable but I will let you know if it does. This recipe is now in my 5 Star folder, an absolute keeper!

Yes, you can use cooking wine for this recipe! Just make sure to adjust the salt accordingly. Most cooking wines have quite a bit of salt already added. Enjoy!

I’ve never made Beef Stew before and I didn’t even know where to start minus a few key ingredients. I have made this recipe over a dozen times now and is a family favorite. I like to make mine a little more hearty so I add more of (__?__) to suit my needs. I also add a little corn. But if you stay in the lines of this recipe you won’t go wrong. I can’t even imagine cooking it another way. So thank you sooooo much. Your recipe is now one of mine and I will always cherish it. If you like yours a little thicker after the starches do their job, Wondra quick mixing flour will thicken this to your preference. 5*****

That's what I do!!! I add a little flour to the beef broth as well before I pour it into the pot and it comes out way thicker than the one in the pic! This one looks more like a "soup" than a stew. I also use way less salt.
@Revelation18-45 жыл бұрын
@@karencalifano6132 Same here. Too much salt in stew will make meat tougher and take longer to tenderize and breakdown. You can always add more salt and pepper when serving it up. Some homemade Italian bread goes well with stew also.

5:10 adding the potatoes to a low simmering pot will be ready to eat in 20 minutes? How about an hour or two? I'm Irish, I know my potatoes. Other than that detail, great recipe. You can boil potatoes in 20 minutes and then add them to your stew but to cook the potatoes in a simmering pot will take MUCH longer. EDIT: I put a stew on the stove simmering at 8PM tonight, it is currently 10PM and the potatoes are not yet ready.
