【RECIPE】
⚫︎INGREDIENTS
・firefly squid
・rice oil (Any oil is fine if it is not solid in the fridge like grapeseed oil.)
・garlic koji(I made it by myself but you can use grated garlic or sliced garlic instead.)
・soy sauce
・Japanese sake(white wine is also fine)
・sterilized jar
⚫︎METHOD
① Remove the firefly squid's eyes.
② Heat some rice oil in a pan and fry the firefly squid. It should be on medium to low heat.★
③ Add Japanese sake to it and increase the fire a bit.
④ Add garlic koji and soy sauce. Stir gently so that the flavor permeates the firefly squid.
Once cooled down, put the firefly squid and garlic into a jar and add some rice oil until full.
⑥ Stow it in the fridge overnight.
★If you use sliced garlic, first sauté your sliced garlic in the pan to add its aroma to the rice oil. Take out the garlic before they burn. And then, follow the procedure listed above. Please put the garlic in the jar later.
