How to Create BOM (Bill of Material) In SAP - PP Master Data CS01

speaking of list of materials... is there a way to add an option for a component in the list? meaning, if i'm out of stock in sap, it will check for the second option and consume this. I'm trying to avoid creating another version, just for a component that has two options available.

At which point you need to check the stock? During BOM creation or production confirmation
