I think I've been cutting it with the grain. No matter how expensive the steak, it is chewy. Well, at least I've developed strong jaw muscles. Your explanation was good. Better than any I've seen so far. (I'd like to say politely, the loud music was distracting and make it hard to concentrate on your words).

Just as an added suggestion: Just look at the side edge of the steak where the meat is exposed.. You will see the grain easily and it is running from top to bottom of steak surface. You seemed to have ignored that. Chops bone in are the same.

What if your grains are running vertical? It can't be cut against the grain no matter how you slice it unless you cut it horizontally.

Indeed the steak shown here has vertical grains which has been cut across the grain from a larger muscle. I think if she were to cut on a bias, then the result would be a somewhat shorter grain.

It's just wrong. You can't cut strip steaks against the grain unless you stand it up on it's side and slice cutlets. It's anatomically impossible otherwise. You could slice it at angles, though, which would further shorten the grain. Same goes for ribeye.

The best way to get evenly cooked super tender steak is to cut the steak up into stir fry sized strips prior to cooking it. Perfectly cooked steak first time, every time.

Lot of talk and only shows how to cut when cooked, one has to also cut raw, way too long
