there are 3 main types of round.. bottom round, top (inside) round, and eye round. you can get them separate or buy them together for a "full round." The top round is your london broil. top round roast, top round steak, i sometimes cube and stew it. bottom round is where you get a bottom round steak, bottom round roast, breakfast steaks. its great for stew and cube, and a rump roast. eye of round is your eye round roast, eye round steaks. and sometimes stew and cube.

shoulder is easy... you have a fatty side and a silver side.. peel some of the fat off and take the silver off. it kinda looks like a triangle. take the 2 corners of the triangle and use it for stew. then just across the grain for steaks and roasts. i usually take my steaks off the end and roasts out of the middle

Thanks! my question marks had an answer? I'm getting mad at these cuts! My BJs cuts are never constant like it used to be! I can save $, But I think I'm being lied to with these rear rounds, top or bottom? Theres real incentive to cheat us here! - Please keep the Vids coming! - We have so much to learn from you. If you get a BJs cut it would help a lot. My Costco does not sell any of these rounds anymore? Even an eye he said is the same price cut in half and trimmed? S Miami FL

Cant see a London broil out of this cut? - What BJ's sells is a "Beef Round Eye" at $2.99 a pound. I just bought a 8.7 lb for around $24.00. I cut the ends off as roast beefs, then cut some Pot Roast chunks, plus thinner stakes out of the rest. You have to tenderize the steaks for sure, but they're still tasty! Pork tenderloin! - Save a lot of money chopping one of these up! - Its just the wife & I - we get 2 pork roasts & 15 pork chop dinners, me thicker cuts! - $20.Total cost = $1 a meal
