You mentioned that you keep your house and your vehicle cold. I was wondering though, what would happen if you deliver a cake cold to a customer and they don't have air conditioner in their home and it's hot, wouldn't the cake start to sweat? Where I live it's really hot and humid so I don't dare refrigerate my cakes because of sweating issues. I don't have a/c though so all my cakes are ice in room temperature environment. I find it's the only way to keep it from sweating. My icing is shortening base. Great video and tips might have to invest in an a/c for my kitchen.

I always tell customers that they must keep the cake in a cool place to bring it to room temp slowly. That goes for when they pick up cakes, I tell them they need air conditioning in the car. Usually if I deliver a cake, it has time to warm up a little bit as I'm driving with it so it isn't very cold when I drop it off. I have had people tell me that the party is outside or they can't keep it cool. In that case, I warn them ahead of time that it needs to stay out of the sun and there is a chance the butter in the frosting could melt and they make the call whether or not they want the cake. If you are in an area where most people don't have air conditioning, it is best that you keep everything room temperature so you avoid the sweating issue. Although, I think that transporting warm cakes is risky! Do you have issues when you or your customers drive with room temperature cakes?

@@KarolynsKakes No I deliver cakes at room temperature all the time. And our roads are horrible, horrible! lol! I go very slow, however, I do have the A/C on in my vehicle. I delivered a wedding cake (Horrible, bumpy road) for a drive that normally would take mins took me hours! The problem is that in my country most wedding venues are out side, or garden weddings with no a/c. It is hot all year round in my country though. So the only recipe I find that works is shortening base which have to be a stiff consistency. I have never have a cake collapse or anything like that. But I do agree with you its very risky!

@@Jodha1 well kinda lol. I live in Belize Central America however we identify largely with the caribbean since we are a former colony of England.

Hi, I'm from Saint Lucia and I'm having trouble with condensation. I don't have an AC unit at home. I will have to give the shortening buttercream a try. Do you use vegetable shortening?

@Janie's sweets said try putting the cake in a cardboard box then put it in the fridge , it lessens the condensation. Im gonna try that cause i live in Durban and mostly hot

Hi naledi, I'm also in durban, the heat isnext level, I try to ganach it instead, but I've se it In a cardboard box, still saw a few droplets on the cake, however I rather have a chilled cake than a cake that topples, I tell client very cold car, then fridge, the back to an aircon room

Hi Ms. Karolyn! I just discovered a trick on how to get rid of sweat and condensation on a cake and I would like to share this trick with you and your audience. I put my cake in front of the dehumidifier, fan on high, for about 30 minutes and condensation started to disappear. I have a 70pt dehumidifier and that’s what I used this morning. I was so happy! Thought I would have to scrape off the buttercream and start all over but I did not have to.

@@KarolynsKakes I did not wrap my cake. I just left my cake uncovered on the table and let the dehumidifier run, eventually the sweat was gone.

??? Could you put a thermometer in fridge to give us your exact temperature? I wish I had numbers but I have Cold, Colder & Coldest (which I hate). Thanks.

Thank You so much for this video. I made my moms cake for her birthday and I didn’t know what to do with the condensation. I patted it dry and smoothed the icing again before freezing it. Quick question how long should my cake stay in the freezer? Once we took the cake out it was frozen inside. What should I do?

If you freeze a cake, you have to gradually bring it to room temp to avoid condensation. Take it out of the freezer, then put it directly into the fridge overnight. Then take it out of the fridge and let it sit out in a COLD air conditioned room to help prevent condensation. If you don't have access to air conditioning, you are going to have condensation issues if you refrigerate or freeze your cakes!

I always tell people that they MUST keep the cake in a COOL environment until it comes to room temperature. They can't take a cold cake and stick it outside in the sun. It's their responsibility to take care of the cake correctly once it leaves your hands!

Thank you for this video; I only recently started icing cakes and I observed that they always sweat on the table. I stay in Nigeria and it’s really hot here sometimes; the house doesn’t have air conditioning at all so I can’t keep the environment cool after icing. Is it possible to ice the whole cake without putting it in the freezer at all? I usually get those big water circles that flow down and gather at the bottom 😭

Those water drops are the worst!! If you are in a climate where it is hot, you may be better using a French, Swiss or Italian buttercream recipe as they can withstand the heat a little better. I have never personally worked with those, so you may want to search other videos on how to make and work with those recipes.

Love this video! I now have a cake that’s all wet from sweat. Is there anyway to remove the sweat and make it not shiny or it’s to late and it’s only something that can be prevented not fixed?

When I find droplets forming, I put it back in the refrigerator. Then you want to get your room cool before you take the cake out again. It SUCKS, I'm sorry that happened! How bad are the droplets?

I've never had a sweating cake. I haven't made a ton of cakes though. Also, I live in California, the bay area. Maybe because it's not humid here?? Idk, it does get hot but maybe it's just because I haven't been in that kind of situation yet. Thanks for the video!

Count your blessings that you haven't had to deal with this! Yes, when it is humid, this is more of a problem. That's why I love the cooler months around here!

I didn't refrigerate my cake..next morning it had tiny water drops on the top of the cake. :( So trying to figure out what happened. I had it inside a cake keeper but no moisture on the plastic lid at all.

I'm sorry that happened to you Cheryl! I know a lot of people say to put it in a box and the box will form condensation instead of the cake. But I never trusted that. I just prefer to gradually bring it to room temperature. Did you leave it in an air conditioned room?

I have tried with no success. Because I think a fan doesn't really control the humidity in the room. If you refrigerate your cakes, you want the environment you're working in to be as cool / less humid as possible. If you try a fan and it works, please let me know!

You have to control the temperature of the room that your cake is in. If you take the cake out of the fridge and into a warm room, it is going to sweat. You must have air conditioning if you're going to refrigerate cakes when it is hot outside!

I'm sorry I couldn't help. If you don't have access to air conditioning, refrigerating your cakes may not be good just because it will be difficult to control the condensation that will inevitably form on the outside. I have always worked in an air conditioned environment, so I am not sure what to recommend since I don't have experience without it.
