amazing!! From my experience, it is best to cook aged steaks to 115-120 internal temp. the funk flavor is mostly in the fat.

Can you fry age them, cut them and vacuum pack then freeze them? I know they are best fresh but it’s just me and my wife.

Thats hilarious that you thought you had a strip loin. I actually did the opposite recently. Went to Costco and bought a prime strip loin and a choice full rib roast. Brought them home only to realize when I went to cut the steaks out of them that I accidently picked up 2 strip loins, one prime and one choice. So now I have 22 NY Strip steaks in my freezer. I guess there's worse problems to have!

There is with a dry aging bag in your fridge. You just have to try and not open the door to the fridge. Moisture control also needs to be between 70% at the lowest and 80% at the highest

Actual dry aging requires a balance of temperature, air flow and humidity you can't achieve in a standard fridge. If one of those factors isn't right you wind up with meat that's either completely spoiled or so dried out only a small portion is viable. I know there's special bags/film that claim you can age meats at home, but I can't speak to those.
