One note, we do need the normal kitchen salt (not refined, just the normal thick one) because it has added Iodine which is very important for us, specially children. I also love those other salts for their variety (namely the rock salts from himalayas) but as far as I know they do not contain the required amount of Iodine :) stay healthy! Cheers!

I love leeks because our Anglo ancestors ate them with their meat. It provides taste, texture and ruffage. Balanced. I’ve got a juicy nutritious steak waiting to be eaten with leeks. I can’t wait! Fat only becomes a problem if you eat too many carbs such as grains, bread and pasta. Also sugar in fruit is something to take note of. The body uses the quickest energy first. So mixing sugars/carbs with fat? Will get you fat. Live a healthy life by eating the most nutrient dense whole foods and staying away from a lot of sugar filled fruit and carbs. Learn from your ancestors.

that's because leeks tend to have dirt between the separate leaves all down to the stock caused by how it grows. I came to video looking for a way to clean them and cook them the way she has, but I don't see how she could have adequately gotten the dirt out of the leek. So following this makes me cautious about what I'm feeding to those I'm cooking for.

Most himalian salt that is sold is actually salt for sausages which is coloured pink to differentiate it from regular salt. It has some chemicals essential for sausages but not good for regular every day use. It is much cheaper than authentic himalian salt which is really expensive. So be aware

You MUST have leaked at one time or another. 😆 Leeks, however, are a different matter (sorry - I know that was cheap, but I'm only human.) I adore leeks - and brussel sprouts, and cauliflower. You know - all those things that people 'hate'? When people "don't like leeks" (or sprouts or cauliflower) it's usually because they've never experienced such things other than with the taste thoroughly boiled out. "Boiled to buggery!" my late Grandma used to say. It was my Nan who taught me to appreciate such stuff (don't get me started on black pudding!) With both leeks and sprouts, she used to boil for just a couple of minutes, until just tender and no more. Served with butter and a pinch of salt and pepper. Any still left the day after were lightly fried in butter as a breakfast side dish. All done, I need to mention, on one of those old fireside oven ranges you raked the coals under. I've honestly seen people at my Nan's table asking "What was that? It was lovely! Leeks? But I don't LIKE leeks!" If you've never tried leeks, please do so at least once in your life. Potato and leek soup is my favourite winter supper, usually made in a slow cooker. If you genuinely don't care for them, it's a free country. But don't base your taste on other people's cooking. One warning. They're a 'dirty' vegetable you must ALWAYS wash, whatever anyone might tell you to tbe contrary. They do chop and freeze well. One last thing - a halfway decent leek is 1 to 1.5 inches in diameter. Some smaller ones can be tasty, but in general avoid them as plucked afore their time into this world. If you can find a genuine farmers market you can often find them 4 inches wide. And then there's the edible 'bolt' which I can only suggest you Google before this ramble turns into War and Peace.
