Not sure where you are from, as that would make a difference, but I actually got my first bottles from Alberta and now there's a local Distillery in Welland I will go to in the future👍

Is it completely shelf stable at room temp after the 3 wk freeze? Or should it be refrigerated?

Either keep in freezer permanently or in the fridge for up to 6 weeks👍

Time saving tip, cordless drill with a wide paddle bit in it. Force a lemon over the paddle bit and with the drill running (not too fast), drag a micro zester/micro planer across the lemon. Done in just a few seconds. You end up with threads of peel which I think speeds up the extraction process.
