I cannot convey how much I appreciate you sharing this with us! This was very special, not many people are willing to share their family recipes. There are people that may argue that some of the steps taken were unnecessary. But those steps are what made this recipe Artisanal. I think the most important steps that people would tend to skip are the ultra pasteurization and the cold "cure" of the liqueur. When high proof alcohol is chilled in the freezer is mellows the "bite" and changes the mouth feel. That is why Russian Vodkas are normally served very, very cold.

Friend of mine gave me a recipe very similar. It took years being friends with an Italian regular before he would finally share the recipe with my friend. Friend also did a variation that was half lemon, half lime, with basil and it was delicious! Buddy’s recipe is 1.75L everclear 12 lemons zest - set aside for at least 3 days 1 gallon (3.8L) 2% milk 2 quarts whole cream 4 lbs sugar 1 Tbsp vanilla extract Bring dairy to almost a boil and right before boiling, mix in the sugar. Once mixed, refrigerate until cool. Then add everclear into the milk solution. Let sit together for another day or two before straining through a sieve/mesh filter. Same as yours though - best frozen, and it gets better the longer it has.

I made this recipe & it tastes great. However, the texture seems to have some small pieces of coagulated milk (maybe is what it is?). Any ideas on what I may have done wrong? Should the milk have boiled for the 20 min's, THEN add sugar? I probably added the sugar about 5 mins into the low boil, then let low boil another 15. Stirring but not touching bottom. Pan had stuck residue at bottom when I was finished. Thanks so much, I am not a experienced cook, so much appreciated!

For all of you wanting to try this, please understand how important it is to use *organic lemons only*. If the lemons have been treated with pesticides, chemical fertilizers, waxes, etc, that crap will immediately infuse into your alcohol and 1. it can make you very sick and 2. it will taste bad. I won't make my own limoncello in the US because I don't live in a climate where lemons are grown so they're all imported and thus, preserved with a coating on the peel 😢 I will definitely try to make this crema with Pallini (my favorite) though! 🤤
