I grew up and lived in LA for 21 years….I’ve never seen anybody turn the crawfish upside down then and squeeze the tail like toothpaste. We just pinch the tail from the body, peel that first ridge off that was closest to where you tore the tail off then pull the meat out of the tail

I first read about crawfish in a mystery novel about a murder in Louisiane. They look like little lobster and I see that they are boiled alive. They now suggest that the lobster have their heads cut off to spare them from suffering when they are boiled. That would take a lot of time and handling to do the same to crawfish! Do you serve them with a sauce or garlic butter on the side?

From personal experience, I actually twist the very end of the tail off, this makes the meat easier to pull out after you remove the tail from the thorax. Then after you eat the tail meat you pull the shell from the top of the crayfish and suck out the sweet succulent juices from its guts
