I think what you were missing there was healthy fats! I remember watching a documentary several years ago where two guys went to live in some impoverished country and live off of $1 a day and basically just had rice and beans and started feeling ill and tired after a few days until a local finally explained to them that they needed to just add some lard to their rice and beans. They were also farming and whatnot to try to add other foods to their diets as much as possible too, but the lard was the key to having enough energy to survive.

This 3-day experiment was both interesting to watch and a helpful mental reset. Even with maybe double the budget to $6, which is less than many people budget, a LOT can be done. I appreciate the video.

You are a lot braver than me. I clearly remember the days when I didn't get enough food as a child and I never ever want to experience those days again. Those days did help in the first year of our marriage when money was extremely tight. We ate a lot of rice and beans and cornbread. We also ate a lot of oatmeal and a lot of soup. We made every kind of soup you could imagine. We always had a grilled cheese sandwich with it or cornbread. Those were the good ole days. lol We still eat soup and grilled cheese once or twice a month. Thanks for this and all of your videos. You make a lot of sense!

Thanks for this. It’s inspiring to see what’s possible when it feels like the grocery costs are out of control. Others have mentioned how important that long soak is when cooking dry beans, but I wanted to suggest rinsing at each step as well. My process is: sort, rinse, long soak, rinse, long cook, rinse. Then season after that. I’ve found rinsing all the foam and bubbles helps with the digestive troubles that often come with beans.

Rinse beans, throw in crockpot, cover with water by at least an inch or more, cook for several hours, add salt at end. Easy and yum. :) For refried, put in a pan, mash and add some of the water. For a regular day when you're not eating cheaply, add some heavy whipping cream to get restaurant refried beans consistency, cumin, garlic powder, etc., other spices to taste.

Gabe, you have to soak beans overnight if they hurt your stomach. There is a compound in them that we cannot readily digest, but the soak make it possible. Icr what the compound is called. Also, before the whole gluten free craze, I used to make my kids "pancakes" 🥞 with 1 banana 🍌 and 2 eggs 🥚 blend well and spread a very thin layer. Too thick and they don't cook or taste right. Almost like a crépe. No syrup necessary bc the banana is sweet enough. Try it! 🥰

Hi Gabe, If you find yourself eating beans quite often, you should consider getting a pressure canner or at least a pressure cooker. We actually can ours so we can make most anything in minutes. Hummus, bean dip, refried beans, etc. It really isn't difficult and not a lot of equipment needed besides the pressure canner & jars. It's very simple. Don't let anyone convince you otherwise. Here in New Mexico, USA for people don’t know the geography for the USA states😉 New Mexico is the Chile Capital of the world and one of our main staples is pinto beans. We make delicious beans and refried beans that are to be soaked over night and sugar or baking soda can be added to help with gas and bloating. You get used to the fiber in beans after awhile. You need to usually add at least a little bit of pepper and salt. You can add spices of cumin. Chile of green or red can also be added to taste. Refried beans are to be fried and mashed in a pan and they can be very soft and creamy. You must always boil long enough . They can be frozen to save for later. Some people even fry with butter or lard or bacon lard. Just a few tips.

Interesting to make tortillas of split peas! BTW, you could turn oatmeal into a flour by putting it in your blender. That may have aided the tortilla and pancake batter. I think timing on the fried rice may have helped. Browning it in the pan and folding in other foods (or vice versa) one at a time may have helped that mixture….and soy sauce of course. Have you ever watched the “what if” segments on Mornings with Granny? She will use free packets of this and that such as soy sauce for meager meals made from “end of the month” foods.

Wow lots of weird and borderline negative comments lol didn't expect that! I think it was good you pushed yourself out of your comfort zone and took on this challenge! I would love to see you do this challenge again using any spices you have at home and using a variety of recipes. I think one of the things that made this harder than it could have been is that you were more so eating the ingredients straight. When you made recipes like the sweet potato pancake and the oatmeal cookies you seemed to really enjoy them! So yeah I think prioritizing those eggs to get a lot for cheap and planning the recipes plus using spices would be huge game changers. I hope you'll give it a shot again in the future! ☺

That was a lot of work you did with all those recipes!! I think I might eat oatmeal every day like I already do too and then make a big pot of soup with the rest of the money and eat the same thing for 3 days Actually that is what I often do! Except I do add some different veggies and maybe some fruit and nuts and a piece of crusty bread If you let your rules include olive oil and say you spent 20 cents (measuring it out) that may be a good way to add up the cost of a realistic food cost over a short period of time 😀

I think you could have used a few more "staples" that most people on strict budgets still have on hand. Even at my poorest I always had garlic powder, onion powder, cinnamon, some sort of blended seasoning like Italian and a bottle of hot sauce. All of these are available for $1 at most budget stores. I think that would have made all of your food way more satiating and wouldn't be something that you'd have to include in your $3/day budget since it's along the same lines as salt and pepper.

A few things 1) I was so surprised at the price of food in the US. I was under the impression that food was diet cheap, but the prices were all comparable to the UK or a little more expensive. 2) Do you ever challenge yourself to just eat the food in your house? We tend to not keep a huge store of food as I get anxious about food waste but about once a month I'll force everyone to eat only food that we've already bought (which can lead to some interesting 'free' meals).

A little dry chili toasted and soaked in warm water blended up with boullion powder and water and a little tomato sauce and herbs and spice makes a nice inexpensive sauce. Requires a little oil though. Enchalada sauce. Or tomato chicken boullion and a bag of mixed veg in rice with some garlic for spanish rice. Make homemade tortillas. Flavor is not too expensive. Spices are like 99 cents. But I appreciate what you share. Celantro can be 25 cents a bunch at some international stores. Spices at Indian stores are very inexpensive.

My meals are pretty boring, but cheap and pretty healthy. My staples are: potatoes, sweet potatoes, brown rice, whole wheat spaghetti, rotisserie chicken, tuna, occasionally ground beef, oatmeal, peanut butter, tomatoes, Greek yogurt, eggs, bananas, apples, beans and $1 spices and herbs. I splurge a little on olive oil, organic baby spinach, and almond milk. But I'm definitely on a low budget and I think I'm the healthiest I've ever been eating this way.

Great inspiration: the making of tortillas with your lentils/ split peas don’t remember which, but BRILLIANT. Also, sweet potato pancakes!😋 YUM. HINT: add a clove of garlic to the water you cook the beans in, that & / or cumin. Love your channel.

Beans- they need to be soaked, one day or can be longer. Then cook in a crockpot with spices. You can freeze the cooked beans for future used. I would have gone to the cheapest store and really tried to stretch my dollars. Think depression cooking. Interesting project. Tempted to try mysef.. oh when you soak the beans they are easier on your stomach.

Maybe next time try soy beans? They have lots more flavor and protein. I grew up poor and my Mom made this delicious soy bean mince with carrots, potatoes and onions. And we had "mieliepap", a coarse porridge made from corn that is very cheap and very healthy and goes great with stews. We always had apples to eat, which is organic and fresh and cheap here in South Africa. Eggs and chicken is also cheap here.

When cooking beans like that, DO NOT RINSE THEM. Just add the whole can in and use the juice in the can to cook down to like a gravy. Self gravy

I think I would have bought the hamburger some eggs and some red leaf lettuce. I have made chili or sloppy Joe's or hamburgers or tacos and still have leftovers the lettuce for salad and eggs for hard boiled or scrambled or fried

This goes to show how little additional items go a long way, like some lard & spice would have made the beans so much better! A little cinnamon and sugar for the oatmeal.

Were your beans soft and moist or more on the dry gritty side? I love cooking beans in my instant pot. I think it is about 40-50 minutes pressure cook and 15-17 rest time before releasing the pressure. Sure beats the 8.5 hours in the crock pot I did for over a decade. The key is finding the buttery water to salt ratio . I can’t remember if it is the same as soup 3 cups of water to1 teaspoon salt or something else. It has become so automatic to me...and barely blending them in the blender. If you do it right you don’t even notice when there’s no cheese. Just need chips. Onion powder is great, chicken broth gives it that restaurant richness, if you like pepper that gives it a great kick and I like to throw on Trader Joe’s chili lime seasoning.

9 dollar for 3 days, easy peasy, been there done that both for fun and for not so fun times in my life. I could easy squeeze in 5-6 days for that amount. Now in the start of harvest time it´s quite easy here, sinse alot of produce is cheaper or can be found for free outside. I don´t have a garden on my own tho I have loads of herbs growing on my balchony, including peppermint that would make me a fine tea. I can find ripe raspberries, blueberries, apples and sea buckthorn, growing wild just a few minutes from our house, perhaps plums to if they are ready to pic. For a variaty of delicious mushrooms to pick, I would need to walk about 2 kilometers. I would pic a lot of the same things that you choose tho I can get 2 kilo of oats for as little as 1.5 dollar. I would use it to make oatmeal, oatmilk, flour, and in panncakes. My big issue would be that I don´t have non stick pans, my enamel cast iron pans need either oil or butter and that wouldn´t fit in the budget.

I buy yellow peas in bulk. Then its 75 Cent /kg. Organic oats I can have for 1,15 $ / kg. Total 1,9 $ for 7100 Cal. When I am eating 2366 cal. its 63 cents a day.... But I also eat 250 G of fatty ground beef every day. Thats 2,53 $. Or 3,16 $ total a day.. Oats are always highly fermented and eaten raw. Cooked or baked. Peas are most often eaten as natto. Been eating like this for a bit over 3 month. So fare so good. And I still look forward to my meals every time..😋

I think an instant pot would be a good investment because you can cook vegetables fast beans cook in like 30 minutes from dry. You can precook your oats and rice or whatever. Meets, and the time savings alone would be worth the investment. Which probably wouldn't be very much for a small instant pot. I'm Cooking for 2 Dobermans And myself. I made enough beans and rice To feed us intermittently for a week. I added to the beans and rice left over breakfast sausage. Some bacon. And I had some leftover peppers. The boys love it. So do I.

Grocery store costs were just starting to make me angry so I decided to put myself on a $25 per week budget just to see if I could get creative. I didn't need to do this but wanted to. I've stuck to it for 10 weeks now. 3 meals per day plus one snack or dessert. Amazing what you can do when you put your mind to it. My bank account is loving it! My average spend has been $22.41. It's been fun.

@@pennynickels5216 I start with whatever is on sale that week. For breakfast I usually have an English muffin guacamole and a sliced tomato. Sometimes oatmeal, or a mushroom omlet. for lunch, salad with whatever vegetables were on sale and tuna or grilled chicken. Or sometimes peanut butter & banana or pb & pickle wrap. Watermelon is in season (cut spears .99) for dinner (this week) I made stuffed green peppers with tomatoes, celery, onion & orzo. Plus sausage links were on sale so I'll be making sausage (3.00), peppers & onions with mashed potatoes. Some items I have in my pantry like milk, butter, salt & pepper. I made oatmeal cookies that I keep in the freezer & pull out 1 at a time. Anyhow each week is different. I'm not picky but I do eat as healthy & fresh as I can. I don't mind leftovers.
