Noob. I can get all the Lobster meat out without using a “device” to crack the shell open. The tomalley reminds me of Uni/Sea Urchin and it’s the most flavorful part. I use it as a sauce and dip the meat in it alternating with the lemon butter. It’s perfectly seasoned and melts in your mouth. It’s a shame when I see people toss out the Lobsters with the glob of tomalley still in it.

I've seen many Americans eating lobsters just by removing the meat from the tail and the claws, and leaving everything else intact and untouched. This is not only wasteful, but the best and tastiest part of the lobster is inside the head section.

It can make you sick, if the lobster was eating anything that's been munching on the red tide algae. The toxins that cause paralytic shellfish poisoning can accumulate in the tomalley, because it's kinda like its liver and filters the toxins out of its body. It depends, but if it does happen, you can get really dizzy and nauseated.

the claw made me laugh. if its a nice soft shell you can easily use your hands to break the claw. if its a hard shell lobster... forget it. ive cut my hands pretty badly on claws

I wasn't born a New Englander. I'm a transplant from the tri-state. I've taken to the food up here, but an Abizza is not NYC pizza. There are little holes-in-the-wall that I'll walk in for lunch, where a common tourist would shit themselves. But after being up here for 13 years, I'm enjoying it. I don't know all the nuances, but I know how to eat. I grew up with this stuff, since my parents ate it when it was cheap. But don't don't try to pass off a Dunkin bagel as one from Brooklyn, baked salmon as kippered--where's the smoke? That shit I'll spot from a mile away. If this guy cap'ns a schooner for that many years, give him the benefit of the doubt. It's not really: How to eat a lobster like a native, but really: How I eat a lobster like I've seen other boat capn's eat after all these years. Bless his heart. He's living.

My family and I have been going to Maine for the past 12 years every summer and I am yet to learn how to break down a Lobsta :) We always ask our Mainer's family to do it for us. I don't eat the guacamole though. We'll be there again in July 01, 2018 (13th year baby and never get tired of Maine's beauty, the locals, etc., we love it)
