Yes, you're correct. Add a subscriber to WordPress first. Then you can enroll the student in the course.

Your students are registered on your site also. Can you check your list of Users on your WordPress site? That should give you access to all your users information.

You need to enable the signup feature from WordPress Dashboard > Settings > General > Membership.
