I am a basic cook as well Tessie.I would rather be outside with my garden and chickens then in the kitchen all day cooking. I learned from my Mother who was such a great cook. I don't ever remember her using a recipe, but everything she made was awesome. Her one rule of cooking was to control the spice. She always said a little goes along way. I still prepare some of her dishes today many years later. I have to put my own turn on them because she never wrote down how she prepared the dish. One of my favorite dishes of her's that the family loved was fried macaroni and tomatoes. She would make that and pinto beans and we thought we were eating in high cotton.

This was my second video tonight. I use eggs bread crumbs I put salsa in my meatloaf and then for the topping I wait till it's almost done I mix honey and barbecue sauce and put that on top. But that's a good way for me to make up a bunch and freeze it. I never thought of doing it that way. Love you goodnight Tessie.❤⭕

I still make my meatloaf in my regular loaf pan but I get 3 meals out of it now. Most nights we have a meal and then the next 2 nights we just have “more” of the same meal. Hahaha. You do what you have to do.

Recently my mom gave me her Betty Crocker cookbook from the 1950’s. One of the recipes was for “emergency steak.” It was ground beef mixed with a cup of Wheaties cereal, shaped into the shape of a T-bone steak, and baked. I thought it was so funny! Thanks for the meat stretching ideas.

When my children was growing up I couldn't afford salads-cheese- any of the good stuff so if any one asked me for the recipe for something I made i couldn't give it to them because I never made anything the same way twice.

This is my Problem so many want recipes from me ,,well I do not really use many recipes and my food is very mundane ,I am not a gourmet cook,In fact I rather be outside :) I tend to cook with whatever I have on hand and make a recipe up :)

Making tortillas takes very little meat and adding a can of refried beans with a little chopped onion chopped lettuce and tomatoes is cheap too. Add a little of the hamburger with the Mac and cheese plus one can of stewed tomatoes to your Mac and cheese. Is very cheap. Use the boxed Mac and cheese. Cheap meals, but tasty.

Young girls nowadays are not shown how to cook at home or school so these everyday meals are very helpful. I’m a senior and have learned a few things myself. My hubby and I would easily each eat one of those mini meat loafs by ourselves! I can't believe your 3 of your family members share one of those mini meatloaves! Even with the extra side dishes. We always serve either mashed potatoes or baked potatoes, and a huge salad or green beans with it.

I add shredded cabbage,carrot,onion to my meat loaf. You could add shredded potato,zucchini,broccoli,cauliflower. Cheap veggies to add to the meat loaf.

In my country they sell meat substitute made from dehydrated soy, used by vegans. You add some water to moist it, I then mix it half and half with hamburger, and then I do the regular recipe for hamburgers or meat loaf or meat balls even with tomato sauce for spaghetti. No one in my family has cought on or even noticed it. Try it, you will love it. Some people use it as if it was meat and add 5he onions, etc.and it comes out perfect.

Hey Tessie! Your meatloaf recipe video popped up on my stream today. 85 cents for a dozen eggs. Today at Redners eggs were $8.00 for 18 count.. I will definitely make them last. I grew up using oatmeal instead of the bread crumbs. 1 pound ground beef. 1 egg. 1 cup of long cooking oatmeal. 1/8 cup Worcester sauce. Salt and pepper to taste. 1 can diced tomatoes. One small sweet onion.

Well, that is one meal we don't have in our home, hubby will not eat meatloaf of any kind. I have a couple of Marcia Adam's cookbooks including the one your using, love them. Also, do some freezer cooking, we also only have the small chest freezer so not alot of room for alot

Beautiful Bowl. You could make this in a Bundt pan too and then make slices. My mama also did a lot of German/Mennonite type cooking. She would use what she had so sometimes her meatloaf had oatmeal, sometimes cracker crumbs or bread crumbs.

I add ground turkey/pork or sausage so 1/3 mix of beef with other meat it helps. Of course you can purée some carrot or spinach sneak that in for picky kids!! I love your video

Porcupine meatballs.. Add rice to the meat mix and make meatballs.. A little tomato sauce and its delish! It will sure stretch your ground beef! I always eat it over rice with green beans... yummy! I think an excellent idea for a video that I would like to see would be meal prepping from your pantry and freezer. Recipes you could share incorporating your canned stuff or freezer stuff. You could probably come up with an endless series.

I use rolled oats instead of bread crumbs. A bit healthier and I like it better. Some people put grated carrot in with the meat. I also add catsup into the meat when mixing. I skip the mustard in the glaze. Also, when a recipe calls for 1 lb of ground beef I use 3/4. After I buy it I slit it up into 3/4 lb packages and it's ready to go. (for fewer people)

Awesome recipe. Good to see it's not just me that's doing things a little cheaper. We don't say we're on a low income, but that we like to be smart with our money. AND you never know when those freezer meals are carrying you through a rough patch (we just got through one over the winter). It really does pay to be prepared. I was ready for our rough patch because when I find groceries on for a good sale, I stock up. If it's meat, I make meatloaf and meatballs for the freezer and pack up some for frying in decent-sized portions. I use different spices in the meatloaf and meatballs so things don't get dull. If I didn't portion it out, my dear hubbie and I would eat it all. I got into canning thanks to Noreen's Kitchen and Linda's Pantry. It was a hot summer's day and I had stocked up on some great deals on meat. Got to the house and said 'Uh oh there's no room in the freezer AT ALL. What am I going to do!?!!'. At that point, those ladies' canning vids came to mind and I started to pressure can. Haven't looked back since. Though, I will admit, I'm not a big fan of canned hamburger. It tastes weird, but I still will use it up in spaghetti sauce. Sorry for the long note, but Tessie, you're AWESOME! Nowadays, I put chicken bones and veggie peels aside in the freezer and when I have 'enough' I clean out my pressure canner and make a ton of chicken broth....on my rocket stove when the weather is nice. I then can it up on the rocket stove too. Every time I use my rocket stove to 'do a run' I save about $1 in electricity. Unfortunately it'll take me quite a while to get my money out of the rocket stove, but at least I'm not giving more money to the electricity man. Plus it's a great way to get me outside and enjoy our country livin'. This spring when the weather started to get nice, I had the presence of mind to can our potatoes before they got rotten in the cold cellar. I'm finally starting to get the whole hang of this. The only thing was, that I chopped and canned them all....didn't leave a one...for seed potatoes. Oh well. Back to the store!! (I was really impressed with how these canned up...they are called Nicola potatoes and they're low glycemic index. They held their texture and starches really well in canning...I use them for breakfast hashbrowns and potato salad)....I digress. What interesting lives we live. Whenever I share what I've been up to lately with my friends and acquaintances they get a really funny look on their faces....like 'I know where we're going if the SHTF', or 'You must really like to cook', or 'WHY?!'. I do it because I get quite a kick out of being able to open a couple of jars and have a meal in 30 minutes that tastes like I've been cooking it all day. I get a good feeling that I know exactly what's in those jars. I get a good feeling that I don't need to get the cutting board out AGAIN. AND I get a good feeling when I think back to how much money I saved preserving our garden or canning up that killer of a deal!! Sorry for the ramble. Believe it or not, I could totally keep going but I won't..gotta keep some smart stuff back so I can have a good comment for another time. Hugs from beautiful British Columbia!

Great job just found you, I usually have to pour off a lil grease after baking meatloaf, so I wouldn't need to spray pans it won't stick, I like sauce as well, try putting glaze at beginning and save some in fridge or freezer for the last 15 minutes of cooking, sooooo good

This is close to how I do it. I use a cupcake pan and freeze individual portions (meat pucks) and after I freeze them I remove them and store them all together and when I want to cook them I just take out 2 for each person and use the cupcake pan to cook. I do this with meatloaf, plain hamburger, bacon, taco meat ect...

Hey Tessie, you can add rice and even oatmeal to stretch meat :) I'll be doing this next time I make tacos, I'll take the ground turkey (it's cheaper and i think healthier than ground beef) and I'll add in day old rice (the rice has to be a day old so it's a bit dried out, and so it doesn't turn to mush and clump up in the pan). Plus rice goes good in tacos anyhow!

Great video and ideas, plus, people tend to eat too much meat anyway. I love your money saving recipes. I'd also love to see more Mennonite recipes. Don't sweat the measuring, I like that you are real/genuine.

my poor daughter LOVES meatloaf, but to show her my "recipe" I can't because it usually is whatever I have leftover in the fridge!! LOL...goood that you actually have a recipe you use...LOL, I was shouting don't forget to double stuff!!! LOL, but you caught yourself! LOL, I love the idea of the small loaves...I make all my quick breads in those loaf pans, love them!! All the sides you mentioned would also go well in those loaf pans! As always, Thank you tessie, we love your vids because you are a simple gal, not a professional, you are just like us, and that is why we love you! =) Next time I buy my zaycon fresh order, I will make these meatloaves along with the meatballs i make to fill the freezer! PS...LOVE that bowl you made the BBQ sauce in! Is that local?
