A tip to add to it. When skinning, stop skinning with the knife a bit before the bones start. Then hold the flesh with one hand and skin in the other and pull them apart. The bones come away with the skin and there is no need to cut the bones out

thanks for the skinning tip, been trying to find a good way to skin them. im only just starting to fillet, my main problem is getting all the tiny bones out, but thats mainly from bream, thanks for all the tips, i will hopefully get better with practice.

Good video mate. I liked It. When I fillet them I cut straight down on the fillet between the first and second fins behind the head. (Leave the one fin on). By doing this, there is a little air pocket under the fin you can slip your thumb into at the top of the fillet, and just peel the skin straight off the fillet. No need for knife.. Give it a go.. I find it a bit easier. Cheers buddy

the other way to fillet is after u have made the cut down to the tail just start skinning about 20 mm then grab the flesh and slowly pull away from skin if done properly the bones will be left on the carcus. This method takes a lot of practice and u will lose meat but is quicker if u have a lot to clean.

*At the risk of sounds like a jerk* The easiest way to fillet the flatly is to cut between the two side fins to the spine. Follow the spine to the tale and cut through. Then tear the skin off by placing your thumb/finger between the fin and the flesh. Then pull the two apart.
