Right! I usually buy fresh whole fish or live fish from Asian markets in the US. However, I live in Asia for business most of the year, and its easily and readily available everywhere. So, prepping fish isn't anything new for me. But...I can't stop watching him. haha

I filleted my first fish yesterday. Barely any kitchen experience. The fillets didn't look clean, but it was a successful first try. Just don't start on expensive fish and don't worry about messing up.

@@malkhalifa3D The larger fish is easier to fillet. The small fish can be next to impossible to have good fillets. There is a lot of technique in how you angle the blade up or down to get clean cuts. The guy on the video is very good with his techniques.

The amount of fish that he is cutting and the information he has on each one is insane. It's like he had a semester long course in college to learn the fish, how to cut them, where they came from, the 2nd, 3rd and 4th cousins and even the flavor profile. The information is golden.

If you think this guy is fast, then you should see processing line workers. They are paid by weight and compete with each other. Slice, slice, done in a few seconds. Easily 5-10 times faster AND less left on the bone.

Recently i worked on boat which had a lot of time to fish freely, catched a lot of tuna, big mackerel, some mahi mahi. I was clueless about fish and how to use knife, now i do very well on my assignment. I like to cut fish so much it gives me sense of satisfying moment lol
