Here in South Jersey, this fish is called a Flounder or Summer Flounder. Up north, this is called a Fluke. Today, I am going to show you how to fillet a Flounder or Fluke to get the most meat off the fish without bones in the fillets. When we are done, they will be ready for the frying pan.
