I have to open up my VR porn?! I also found disabling the openXR plugin fixes it too. Why does raising the priority fix it?

You can open what ever youd like, It's your headset. Im pretty sure priorities mean the grab interaction code in the default mapping context fires first followed by the hand animation code. When the priority = 0 I belive both are trying to fire at the same time which causes the hand anim inputs to not fire at all.

I have exactly the same problem in Half Life Alxy with my new Pimax Crystal Light. It works in the old Pico 4, but the grip animation is missing in the Pimax. Is there a way to fix it there too?
