I am trying really hard to get all kinds of veges into my 5yr old mokopuna (grandchild). I have hit the jackpot - roast potatoes (parboiled and frozen) on Saturday night with roast pork belly all done in my airfryer was well received. Ok to be honest she didn't like the side of green beans and courgettes that I fried up but when she tried the roast agria spud it was like she discovered something magical :) I've ventured into new territory as a nanny....and the butter that went with it was lipsmacking licious....at $2.49 @ kg of yellow agria potatoes I am determined now to par boil spud hash & wedges. I have already parboiled some big ones for filled potatoes so they can be filled with ham and cheese or smoky baked beans and cheese - all with sour cream of course. Thank you Stacey :)

Green vegies (and I love baby squash) smothered in butter with a little salt and pepper. Or, I went to hours of trouble by getting all the fresh vegetables (baby corn, zucchini, celery, capsicum, carrot, you name it) and "blanching" them in boiling salted water, so they were all still slightly crunchy, making a seafood type dip, and serving on a great big platter. Though to be fair, my kids loved vegies anyway, but for the pickier eaters, sometimes a little "crunch" helps. Snow peas and green beans included in that list. Sometimes it's not the taste, but the texture that they don't like. P.S. where applicable, the vegetables were cut into "finger food" sizes before blanching. A few inches long; everything was eaten with hands lol.

Aloha! I learned a new word (kinda) today, "mokopuna". In Hawaiian, we say "mo'opuna", so at first I thought it was a typo, but then I realized mokopuna must be Maori 🤙 I'm watching @FarmersWifeHomestead looking for ways to preserve food for my tutu wahine (I'm her live-in caretaker), and am pleased to have also gained knowledge from your post. 😊 Blessings to you and your mokopuna!

I LOVE oven roasted potatoes and make them A LOT! I chunk up about the same amount you had and throw them in a freezer bag, then add some olive oil to the bag and shake the bag to coat them. I then add granulated garlic, dried rosemary, and fresh cracked black pepper, then shake the bag really well to evenly coat everything. I spread these out on a sheet pan that has been heating in a 425 degree oven (don't know the conversion) that has melted bacon grease, then sprinkle with some kosher salt. Let them cook about 20 minutes and toss/turn them on the pan, then cook another 20-ish minutes or so. This seasoning combination is my favorite to use for ANY oven roasted veggie. And now I am inspired to try and freeze mine! Still need to get you that Borracho beans recipe, but I am also going to send you a recipe for apple cake that is a tradition in my household for Thanksgiving, and has a hard sauce to go with it and it is SUPERB! Thanks Stacey for the inspiration!

Hi Stacy Loving your channel. I prep roast vegges almost the way you do but once they are cold, I pop some oil/melted lard in a bowl, add the cold potatoes and give them a bit of a coating, then back on the tray to open freeze. Heat up tray and roast the preoiled spuds. Works for roast pumpkin, kumara, carrots - Arohanui!

how l do mine, 15 minute boil, 5 minutes in deep fryer and 10 minutes in airfryer, tasty and crisp on the outside, i use agria spuds because the washed spuds are too watery
@MissMerrilooКүн бұрын
Stacey, I have a question. After parboiling then freezing,my question after you roast, is the texture of the potato soft and creamy? I have made soups that have potato in them,froze the soup but the texture of the potato was not the same after heating up. I'm wondering why.
@kiwichica198311 ай бұрын
I have a Sunbeam Halo air fryer which you don't pre heat. Am I best to just toss the frozen potatoes in oil then put them in the air fryer?
@FarmersWifeHomestead11 ай бұрын
It's the oil that needs to be heated, it helps so that they don't stick to the pan. It only needs a minute or two. If you don't want to do that then by all means just give them a quick coat. I have two different air fryers one with a tray and one without. So without a tray, I'm sure just giving them a coating will be fine.
@paulinefriar691610 ай бұрын
For your harvest you may know anyway, you could:- Mash potatoes wax or floury types with butter or not freeze them flat. They don't get mushy in fact they're brilliant heated up in an air fryer or fry pan or halogen oven.
@FarmersWifeHomestead10 ай бұрын
Yes, I've seen them in the supermarket but haven't tried it yet. Thanks for the idea :-)
@cherylp.33477 күн бұрын
I’ve bought the frozen mash from the supermarket, I love them! I have them on hand for when I’m short on time, so quick and easy for hubby and I. You just microwave them and give them a stir, that’s it, you have a wonderful creamy mash. I’m here because i was researching how to make them myself and save some money. I don’t want the mash to be watery when reheated. The ones I buy are sort of 1 inch cubes, so are they not mashed? Or are they mashed, frozen, then cut into cubes? Whatever they’ve done, they come out so so good, it’s hard to stop eating it.
@cherylp.33477 күн бұрын
I’m a mash girl, and hubby is a roasted potato lover so I’ll definitely be trying this out.

Yes, cook from frozen. Hello and thanks for joining in.
@michoost11 ай бұрын
At 10:13 you cover them while they're still piping hot, to let them cool down. What is the reason for covering? Could one leave them open to cool? Also, just wanted to confirm, when you take them out the freezer to put into the oven to roast, to you put them in the oven still frozen? No need to defrost first?
@FarmersWifeHomestead11 ай бұрын
Hello, and thanks for the questions. I purely cover them for the flies while hot so no need to if that isn't an issue. Cook from frozen :-)

Obnly recently found your channel and slowly working my way through the vids. The 3 in 1 in this recipe....I have the exact same - and it is one of the best bits of kitchen equipment I've every had in some 60 years of cooking. What I would like to know.....how do you keep it clean and shiny? Mine, despite cleaning after each use, started looking like it had leprosy...the paint in the interior (yes it is paint!) was discoloured with every spatter of grease/oil. It has gotten so bad I am embarrassed to have it on my bench top!
