We run our eggs in a large food processor then onto the freeze dryer trays. After they come out of the freeze dryer we scoop them out into the food processor again to run for 20 seconds to make them powder. We put them into jars with an oxygen absorber and vacuum seal them. They will last for many years in long term storage.

When I sell them they are vacuum sealed with an oxygen absorber, but for home we go through then so fast that it is a bit much. What all do you use your freeze dried eggs for?

@@BrennanLeigh We make omelets and scrambled eggs. I also use them in baked goods. They are great mixing into flour with a little salt and milk to make egg noodles for soups. Anything you use fresh eggs in can work just the same with dried. I sometimes will pour out a little scrambled egg mixture to make a thin round for making egg and bacon English muffin sandwich for breakfast.
