When making SMBC, it made me cringe to throw out those egg yolks. I was not certain if yolks could be frozen. I will freeze them for pastry cream, lemon curds etc. Eggs have jumped in price so this video is a lifesaver. Thank you.

THx Cathy my regular vanilla cake recipe uses 7 egg whites so I am always stuck with the yolks. Now thx to this great tip I will be able to freeze them.

That's not 4 egg yolks that's just 3 egg yolks because one still sticking to the bowl

Does the sugar you put into the yolk effect the reciepe if your baking with the frozen yolks?

StarShawn Oliver-Williams It doesn't. If you are saving them for a SAVORY recipe instead of sweet (say Hollandaise Sauce), you can use 1/8 tsp SALT instead of the sugar listed.

What if I don't want any sugar in my eggs? Why not cook the eggs first and then freeze them in tupperware so you can reheat them when you want to eat them?

I came across this video. How could you fix the thawed yolks came from freezer, it solidify. It came from the boxes my Chef ordered it and freeze it

+Dawn2Dusk23 If you look at the video, I used 1.5 tsp sugar for 4 egg yolks. Easy to go to the calculator.....if you use 1 yolk instead of 4, you would divide 1.5 also by 4, and get .375 tsp, or a little over a third of a teaspoon of sugar for one yolk.
