Harold, it's hard to beat fresh NC shrimp! You were in my old stomping grounds when you visited the Outer Banks. I lived directly behind the 7-11 In Kitty Hawk. I miss that area so much, I now live at the foot of the mountains in SC. Enjoy your videos, keep up the good work.

Great video! I am getting my annual 25lbs from OBX today! I have had a hard time with the freezing process. Tried freezing in a freezer bag. The shells poke thru and they get freezer burned. I tried to peel and devein then freeze. It took forever!! This year I am going to fill the bags with water since I have no container, which, looks like the winner with what I have on hand. So next year I am going to buy the containers! Thanks for this information!

Very interesting video. I'll continue to harvest my shrimp from the grocery freezer case, but it was interesting to see how you go to the source and prep them yourself for later use. Do you wait until you're ready to cook them to remove the shells and devein them, or is this optional at the time you freeze them? Keep up the good work Harold. I love your videos; especially the gardening vids.

Watch how farm raised shrimp from asia are raised and harvested. You will never want to buy crappy flavorless walmart shrimp again. Fresh US shrimp is the best. Search it on yt.

100 pounds of head on shrimp makes about 60 pounds of tails. Tails drop the count by 2 sizes which explains the price discrepancy. Head on shrimp if boiled have a much better flavor. Shrimp do not peel well until on ice for 3 days. Shrimp have a better texture and flavor if frozen as fast as possible. It's called IQF or individually quick frozen. They are frozen so fast that all the ice crystals are very small and much less damaging to the flesh. Fresh shrimp are better that IQF unless quick frozen. Almost all frozen shrimp are sold as IQF, but are slow frozen, so beware.

My guess is to prevent the meat from getting freezer burnt.
