Awwww..I just stumbled upon this video today, June 22,2021, and reading the comments I've leraned that the woman showing me how to freeze all these green peppers I have, has gone home to be with lord. My condolences to her family and my appreciation to them also for leaving her videos available to us. I'm sure I'll be scrolling through to get more tips and recipes because her voice is so soothing and comforting. ❤

God bless her soul. I’ve tried her method with green, red and yellow bell peppers. Her system works. I didn’t have the veggie containers she had used. After that first freeze on the cookie sheet, I distributed portions in small plastic bags. So thankful to always have a variety of bell pepper on hand.

This video was SO helpful. I wish more of the older generation would teach us these things. it cost me 5.49 for a 4 pack of these at BJ's today because I couldn't get to the farmer's market and I want to do stuffed peppers. But a lot of times they go bad because I was ignorant of better methods.

I have been doing this with my peppers every since i saw this video years ago. I continue to use the knowledge she bestowed upon us. I do washing if the apples. The washing and freezing of the lemons and making lemon ice cubes. I use to waste so many peppers and lemons (lota spoilage i had) not anymore. Again Thanks. We miss you and Mr. Bucky.♥️

Phyllis got me freezing green onions and green peppers. Chop them up and freeze. So handy to go to my freezer while cooking. Sure loved her.

TY, so much for this video! This is the very way I did my bell peppers today. I bought a 5 gallon bucket of cull peppers from the farmer shed for 5$. Wanting to use them in my canning of rotel Tomatoes. My problem is, have everything come off at the same time. I did not want to lose these peppers, so I got to thinking, I need to freeze them... My sister showed me long years ago how to freeze squash, and it not stick together. Slice it, and put on cookie sheet in a single layer and freeze. Then put in a freezer bag. So, why not peppers? I did this, chopped some and sliced some. It worked the same as with squash. :) So happy with this! Now waiting for the other produce to come off... TY! TY! for your video! Blessing's!!

Doris Rives What type of squash did you freeze like that? I'll have to try it! I tried freezing zucchini in steaks cut lengthwise, sticks, rounds, & chunks...and also froze grated/shredded....but found out it gets very mushy...doesn't hold up in a pan to fry, or anything...but I do use the grated for zucchini bread & baking recipes. I didn't want it all to go to waste, so tried using it to thicken soups instead of using milk or cream...it works great if you're looking for a healthier version of a cream soup...I thawed, blended it, & cooked for a bit in separate pan, then added to my soup. It's basically Flavorless, so it won't disturb how you want your soup to taste either...even my husband liked it...and he's fussy...lol. When I freeze stuff, I do as Phyllis does...clean, cut into pieces sized for what Im going to use them in, freeze on a cookie sheet, only I lay down a gallon sized Ziploc bag flat on the table, stuff it, zip it most of the way, roll bag towards opening to force as much air out as possible, & quick zip it the rest of the way. Stack in freezer. Saves space & keeps for a couple years. Peppers, onions, whole jalapeno peppers, & also others that you should blanch first work the same way...I cool them to room temp before putting on cookie sheet to freeze though...then put into Ziploc bags & stack flat.

Hi Phyllis: My husband just received some grn peppers from the vendor we sell our fresh eggs to and we cut out the bad spots, washed, cored and dry and freeze for later use. I knew we did not have to blanch them but I love the idea of pre-freezing the cut pieces and using wax paper and re-using those plastic containers also. We are in N GA and I have subscribed so I can learn even more from your experience. Your directions are very clear, and concise. I must look for the instructional video for freezing onions. Vidalias are the best!

Vidalia are my favorite onions. They have to be really Vidalia though because so many stores claim they are and they aren't. I must say that she is a very good teacher. I watched just a couple years before she passed. I wish it was longer and wish I had met her in real life. I would have enjoyed spending time with her.

Those bell peppers are GORGEOUS! I would be so happy to have a stash like that in my freezer. I have 2 1/2 fridges, and the freezer space that comes with those is all the freezer space I've got. I'm on a VERY fixed income, so I don't see how I would be able to afford a dedicated freezer, but it would be so nice to have all these wonderful frozen items at the ready when I needed them instead of having to run to the store. Thanks for the videos. They're very informative. BTW, I'm one who is fastidious about washing my produce too, so I totally get you! Especially when you said what you did about watching them pick the produce.

Zodija If you use freezer bags instead of containers, you save a lot of space and would not need a dedicated freezer. You can also freeze soups, stews, etc. in freezer bags. One shelf or corner would hold a lot of bags of frozen items. Hope this helps!

I love Vidalias! We get them most of the summer in WI. I got hooked while living in the south. I dehydrated some slices. They taste like fried onion rings! Like you I like to wash my produce. Sometimes I soak things like carrots in a sink of cold clean water containing 1 Tb of bleach, then rinse well and dry. I use a vegetable dicer device to cut them up. It is lots faster. Peppers and onions are great in scrambled eggs. I took oriental cooking classes from a Vietnamese friend. She said when you add bright colored veggies like peppers and broccoli, if you immediately sprinkle a small pinch of sugar over them, it makes your stir fry much more colorful.

I like your video, my first time to see it plus the first time I have ever seen how to freeze a bell pepper. I would just put the whole bell in the freezer, if I did not haft to use it all then I would put the cut pepper in a baggie. I like your way too.

I have been a fan of Phyllis Stokes for years. She has the best recipes for old fashioned banana pudding and lemon meringue pies. I have referred to Phyllis's videos for 7 or 8 years...maybe more...and have never been disappointed. I like to wash my peppers with Dawn too. Sometimes I wash my apples as well. It gets that wax feel off of the peppers and apples. I can't wait to try this! I didn't know that you could freeze peppers. I thought they would get soggy when defrosted.

Phyllis, that is a good idea that you had, of putting wax paper in between the layers of Green peppers and to freeze them in the small freezer first. Its funny how here in California we grow a lot of the country's vegetables like bell peppers, peaches, oranges, beans, strawberries and so on. Bur we never get the price breaks that you folks seem to get. The cheapest I can find bell peppers is $1.00 each. So I grow my own. Again Thank-you for the information.

I love this method! I wash them in vinegar water..... Rinse..... Cut them up.... Let them air dry..and bag in freezer bags... Good for a year or more. ... I love filling the freezer from our garden.

Mansi Sukhadia I just fill the bags and freeze them. You can freeze on a sheet if you prefer but I never have the space to do that. They break apart easily. Just make sure they are dry when you freeze them.

I always wash produce with soap and water. So did you find anything in the pepper with the hole. I was hoping you would have done that on here lol

has this lady passed ?? pls let us know. i just came across her video ( the peppers) and am liking her already..i am sad that i won' t be able to listen to her anymore. surely she has a lot of knowledge. In Africa we say when an elderly dies, it ' s like a library that's burned! ( meaning it's loss of knowledge and wisdom)
