On a trip from our home in California to Texas we stopped at a place called The Inn in Cloudcroft, we ordered thick oven roasted pork chops and mashed potatoes and gravy, the potatoes and gravy were served in dessert glasses with a pedestal! It was soooo fancy and delicious. I think we also had green beans. Then a couple of years later my sister flew out to Ca and she and I drove back to Texas and stopped at the Inn again and had the same delicious meal. Your dinner looks delicious!

Tere, that’s how I feel about fried okra. Funny but I was just thinking about one of the last family reunions our family had, we stopped by our aunt and uncle’s house before heading out to the lake, and she had the largest iron skillet I’d ever seen and also the largest amount of okra I’d ever seen being cooked at one time, and she picked it out of their garden that morning. My daughter and I both love it so much, we will eat the leftovers cold! And chances are we fight over them! I always chop up potatoes about the same size I chop the okra and cook them together after they’ve been coated in yellow cornmeal because that’s how my Mom and all of the other cooks in our family prepared fried okra, I think it may have started as a way to stretch the okra. Not sure of the reason, but that’s still how we cook it. I had planned to go to Sprouts Farmers Market today to get some okra and cantaloupe, but it’s just too hot to go out, it’s over 100 today.
