Santos Garcia the brand of jerk sauce used makes a whole lot of difference. And dont double up on the rum unless yu double up on the jerk sauce as well, or else the rum will overpower it

Charcoal is easy and it does the same thing. Wood takes a long time to burn down to a nice bed of embers and then you have to keep wood on hand in case the embers start to die. Plus you gotta find wood every time you want to grill and good luck if you want to grill in the rain unless you have a dry wood source already stocked. Just way more work than it's worth for most people. And the wood smoke flavor can be had with just a handful soaked wood chips.

Liked it. I dig bacon wrapping but have not done it to legs yet. Sent you a video response of my "Lolipop" chicken leg vid on a pellet grill. Similar but different. Have a look and try removing the tendons with needle nose pliers. You get more of the stuff out that most people don't like in legs. Then I show how to squish it all down to the end giving you clean bones to hang onto. Made them twice and both times got cleaned out by people who "Don't like legs" Ha! Love the channel guys.

Yea buddy. I bbq my lunch for the week. The best and cheapest is smoked chicken thighs. I refer to them as chicken butts. My wife will take a few out of the fridge and make a few tacos that i can warm up.(she is awesome) im gonna try this they they look gewd. I think I'll hit um with a orange mango citrus marinade for an hour or 2 vs the jerk. Thanks guys be safe.

Indeed, take it back to the fire to crisp it up real good. The comments referred to the way the bacon is wrapped around the leg allows you to crisp the skin up along with the bacon..!

What’s your cutting board made from; bamboo? BTW I love your productions and recipes. AND could you give us some more information on fire management on the pit? I see your using a torch to start the Briquettes and I see you using that top that has a top door access, but when you cook for more than two hours, then how are you Keeping it going? Also, how big is that pit diameter? That’s a souped up Weber there👍!
