Thanks Mike! It's a technique I developed while cooking on the Ranch kettle (using a 22" grate) It works VERY well in the Ranch, you can have multiple grates in the basement and it becomes a really fun way to cook

Nice kettle and nice technique for the fish cook. Kinda like the wonky grilled fish at the Fish Market chain, where the really good fish cook runs the slanted grill.

Thought the grill was orange for a sec. Makes me wish Weber made a bright orange grill especially since I'm a big Astros fan.

Haha! Yeah the yellow kettles turn orange when they're super hot. The old lime greens pick up an orange hue as well.

You can do it! This all started out because I wanted to cook on my ranch kettle but my ranch grates were rusted over at the time. I realized the crazy searing power and how it could be used to solve things like this (and bulgogi, it works GREAT on bulgogi)

Going to try this with sea bass tonight - the fishmonger didn't scale the sea bass - can you eat them once grilled and crispy? Or do scales have to come off??

I'm pretty sure you should scale it! I haven't tried it with scales... but my instinct says to scale it
