How to harvest mustard seeds.
These are white mustard seeds. They are the most mild but are still quite hot. If you are harvesting seeds to make mustard, make sure they are either white or yellow seeds. Brown seed makes very spicy/bitter mustard.

I do almost the same thing except, I use a homemade tamper. A 4X4 post, (untreated) about five feet long. Works great, no feet. Then when blowing the chaff, put all the equipment on a white king sized bed sheet or muslin. Then, the seed you do blow away are still retrieved. Much better yield.

You would lose a lot less seed if you used a colander for the first pass to sift seeds away from the big chaff. Then, just winnow the seed from the smaller, lighter chaff.

I would screen the seed first to get the big stuff out. Mustard has such a small seed that winowing can cause a lot of sed loss, so screens work well to get down to the fine stuff, the fan may be too strong to winnow without too much loss. Just the toss method would work.

I ordered my seed from Amazon. I grew a brand of White mustard. If the Mustard seed from your spice cabinet sprouts, it will work too. Sometimes they bake seeds so they don't sprout. But give it a try. Worst case you are out a tea spoon full. :)

Finches are not a problem in Utah. At least not in my 3 years experience growing mustard. Now birds getting my grapes, that's another problem. Harvesting early or netting the plants helps solve that.

White mustard (Sinapis alba). Family (Brassicacea). Aka, Brassica alba or b. Hirta! What makes yellow mustard "yellow" is turmeric, I believe.😉 Edit: The colorant is Curcumin, chemically derived from Turmeric.
