I'm diabetic, too, Hollis. I can tell you that eating veggies, quite particularly lettuce, brings my A1c down, if I eat one big salad a day (or two), and don't eat a lot of meat and carbs. No chicken skin! Certainly no junk food. I do eat fruit in moderation. Diabetes can do horrifying things to you before it finally kills you. I very much want you to maintain a very healthy diet. Not just because you guys are great people. My selfish motivation is because I need you to keep teaching me great methods to grow great food. And build tables and things to further that end. I love making my own dressings. My mouth was watering while you were making that awesome salad dressing. Right up until you added a lot of Korean hot pepper flakes. Then I think I felt my face start to melt off my skull! 😂 Starting at 35:34 - oh what a beautiful sight! Now I know exactly how I want to store my canning when I finally get started! Thank you both for all that you do and all that you share! You truly add to my happiness and well-being. Blessings on you! And hugs and kissies for Bing Bing!

Egg yolks (choline) is very important, especially for diabetics. I'd eat half dozen a day. It's great for regulating cholesterol and hormones too.

@@CL-ty6wp Thank you! I didn't know that! I knew that protein, particularly at breakfast, was important. I was trying to eat one egg a day for breakfast. It's hard for me to do that because even the sight of eggs makes me nauseous. It's easier if I make "egg salad". I will read about choline for sure. My A1c is too high.

I just read a medical journal about a week or so ago, and supposedly the latest is that potatoes are found not to raise blood sugar. I just told my nutritionist about this, this past Tuesday, and she said nothing against them. There's always sweet potatoes and yams, for their lower glycemic index.

I’m just Starting this video, but I just got home from the grocery store, where I was going to ask the meat market if they had any fish heads, but they were closing for the night. They have frozen seafood that I wouldn’t eat (a mix of octopus and stuff like that) that’s like $2.00 a pound And I almost bought some of that to put in the garden because I’m planting a few things in the next few days, but I wanted to ask y’all first… do you think that will work, in place of fish heads? Thanks for all y’all’s videos, sharing how to garden successfully. I’m hoping to see improvement in MY garden, utilizing some of your methods.may God continue to bless y’all; take care of each other and the precious Bing Bing.

I have been a controlled diabetic for decades. You can eat some carbs but you have to keep your carb count to about 45-60 carbs per meal and 15-20 carbs for a snack. A potato had 37 carbs, so it is doable. It is the processed food and sugary desserts you have to cut out. Also boiling potatoes and reheating them or eating potato salad reduces the glycemic index considerably.

OH, I NEED to try the strainer when washing lettice in a bowl. I am in South Texas and have had great luck with nevada lettuce. I'm sorry to hear about the diabetes. My husband was just diagnosed in 2021. He went from a a1c of 12 to and has dropped it down to a 6. We cut out all white rice, white bread, and white noodles and only eat 100 percent whole wheat, very limited amounts, and not every day. Lots of veggies, berries, and lean meat. We walk every day to try and help him drop more weight. He is 6'6 "and carries his weight much like you do. The Lord provided you with such a bounty of good food. May God always bless you and your family. 🥰 to little mister bing bing.

I don't know why but my post keeps disappearing?? Anyway, We are in zone 9a in south central Texas. I hardily recommend Perpetual Spinach Swiss Chard from Everwilde Farms. It grows straight upright with medium, thin leaves. It makes it through our hottest days (100+) as long as we water it daily during those times. We've never had it bolt. It says it's a spinach flavor but we, and our neighbors, think it's milder than that, similar to lettuce. It has a thin leaf and is thin stemmed. We sow it early spring and it goes through to the fall. I think you would really like it. 👍

Something else I remember about potatoes-Glycemic Index! I think young potatoes, like smallish Red Norlands, are supposed to be lower in glycemic index than big lunker taters! Get your dr to refer you to a dietitian. It will be a good laugh, because I never found one that was more than minimally helpful, but you can maybe glean something and it’s worth a try. 👍🏻. And French breakfast radishes are yummy! Maybe add a bit of sliced cucumber….some petals from marigold or calendula flowers, or violets or pansies-all edible! Many other flowers also. Johnny Jump up and viola as well. A boiled fresh egg for protein! Strips of raw carrots, very thin. A sprinkle of chopped parsley, maybe chopped basil, thyme, mint……instead of the hot stuff-my stomach can’t handle it.

I can empathize with you, Hollis. I was diagnosed recently with diabetes too and have to make some major dietary changes. Diabetes runs in my family, so I'm not surprised I have it. I live in zone 8b bordering on 9. I have a very small backyard and use a couple of GreenStalk vertical planters and grow bags. Last year my little garden was a bust because the heat started early in April and stayed over 100° or more the entire summer. My poor veggies struggled so much with the high heat and were not productive. Will have to get some shade cloth to help with the high temps this growing season. Last year, I grew lettuce and it did not do well at all, too hot. This year, I am planting by the moon phases for above and below ground veggies, which allows me to start seedlings and direct sow seeds a little earlier. My seedlings are 5 weeks old and are ready to be transplanted. I love the Black Seeded Simpson too and have some beautiful lettuces to transplant. You should grow some red/purple varieties of lettuce to include polyphenol nutrients in your diet. I am growing Silvia Red Romaine for the first time. Praying for you and wishing you the best with your diabetes journey. God and Nancy will take good care of you. Blessings.

I want to do all I can to avoid medication and complications. Yesterday I started my lettuce and hope that it will be as successful and beautiful as yours. I so appreciate your willingness to share your knowledge. 🥗

I’ve heard that breakfast of a bowl of oatmeal plus a dusting of cinnamon on top ( and butter, milk, whatever) is a reliable diabetic breakfast.

Mr. Hollis. My husband has been a diabetic for about a year now. The first thing he did was go on an extreme low carb diet. The next thing he did was get to a specialist. They put him on Ozympic. It has worked miracles for him so far. I think it’s even about 6 months. His A1C is like a normal person’s A1C. He is a lot less grouchy too.

We love to have baked potato salads. We add a little meat, tomatoes, lettuce, peppers, carrots, celery, sometimes a mango,a little sprinkle of cheese and a dressing. Keeps the kitchen cool in summer too. Yep, hot potatoes and cool veggies, yum. Ooh, I'll have to try sweet potato salad this year. You may want to research taking Chromium and Vanadium together. Some say it cure diabetes.

Ms Nancy could you please tell us how you made your hot sauce? I have a son that loves hot sauces. Thank you all for all you share and teach us. Hollis, you need to plant some Mallard Spinach its great with the greens and Remember to drink LOTS AND LOTS of water when in that Florida humidity it helps flush you out. Almost forgot !! Try throwing some of the carrot top greens in your salads too most people just throw them out, but they too are healthy for you.

I've been type 2 diabetic for 24yrs. I've tried the American diabetic diet which doesn't work. I reversed my diabetes by not eating processed foods, no bread, no starchy vegetables like corn, potatoes and peas. I eat squash, cabbage, collards, cucumbers, tomatoes, peppers, broccoli and cauliflower. Try watching Dr Eric Berg on KZbin. I also eat plenty of meat onions and garlic. Basically keto diet. My A1c went from 12.4 to 5.6 and fasting blood sugar around 82 to 92. Blood pressure is also normal to. Don't feel that you can only have salads. Just don't fry anything especially not in vegetable or seed oils. Cook in butter or olive oil. I've also been losing weight.

Your meal looked very yummy! I’ve gotten hooked on a “ salad” made of shredded cabbage, frozen peas and shredded carrots. I have it with ranch dressing ( probably not as healthy as your dressing for sure). I add chicken to it sometimes too. I love the wildlife inserts, we’re those turkeys?Take care guys and God Bless ✝️🙏❤️

Brother Hollis The Moringa tree is very Benificial to folks with Diabetes. I encourage my patients to incorporate fruits and vegetables into their diet. Pomegranate juice (2-3 oz) is also helpful with decreasing plaque formation in the blood vessels. This juice has a strong flavor so you might want to add water to it. Perhaps try growing some costus igneus (inulin plant) and stevia and momordica charantia (bitter gourd/melon) and chicory and aloe. Florida, my home state, has the perfect climate for many healthful plants. As an RN, I try to work with a lot of natural plant life foremost. That being said, coming from a PennDutch family, I sure do love meat and potatoes too! Hollis, I am sure Nancy will be researching and taking great care of you and actively participating and sharing in your new diet...at least, that has seemed the type of woman she has seemed to be from where I have sat and watched ya'll for so many years! You have had a large hand in our gardening success! Thank you and good health! God bless you both

Dude! I hear you with the blood sugar issues . I just finished 2 weeks of low carb of meat with only veggies like cauliflower, carrots, broccoli and such - no heavy starchy veggies and made protein powder shakes with frozen berries when I had that evening sweet craving. Makes it like ice cream! And I started taking Pure encapsulation digestive enzymes and Betaine with Pepsin which is supposed to help with fatty liver and digestive enzymes. No I don’t sell the stuff lol. In 2 weeks I lost 10 lbs likely mostly fluid I’d been retaining and felt like I had better sustained energy through out the day. When I used a CGM it showed the correlation of between my high low blood sugar to my energy. I’m going yo go buy another to see if how I now feel means my blood sugar is more stable. But…Last night I made some homemade gluten free bread because I was weak LOL This morning I felt hung over !!! Lesson relearned. So this morning I’m back to low carb (I don’t weigh and measure food yet with this low carb as I had done previously). The great thing is that I stopped craving the carbs after about 4 days. The evening protein treat is also no later than 2 hours before bed and I now try not to eat or “break” fast for a good 9 to 10 hours. And only have tea in the morning before that time is up. Apparently it’s good for the gut and insulin resistance for pre diabetic me. I follow this gal The Glucose Goddess on IG off incorporated some of her “hacks” off and on. She’s a bio chemist even tho she’s goofy lol. Good luck! Love the garden videos 😊
