Whenever you want just make sure it's large enough. The bigger the piece the higher your chances.

I put my yam in water but it keeps growing white mold

it should be the opposite. You need to let the fleshy part dry first before it germinate. I use to dip it on ash to protect it against mold for a few days before planting it

@@privatename3447 you need to keep it dry though before the sprouts appear. Ground moisture a key but not to the point you can soak it instead.
